Paint Chip Christmas Tree Ornaments

Paint Chip Christmas Tree Ornament

Whether looking for a classroom project, a grandparent’s gift or just something to keep the kids busy these VERY SIMPLE Christmas Trees will be a hit.  After raiding your local home improvement store and using mostly things you have on hand, things will come together in a snap!  You could even have the kids make these up and use them as gift tag labels!

Be sure to ask your store before taking the chips! I got mine from Lowes, and they had no problem with me taking as many as I needed!

What you need:

  • Sectioned Paint Chips in GREENS
  • Brown Paint Chips or Construction Paper
  • Hole Punch
  • String or Ribbon
  • Elmer’s Glue
  • Stickers, Sequins, Buttons, glitter glue, metallic sharpies, etc to decorate
  • I grabbed a few other paint chips (pinks, blues, purples, reds, yellows, oranges) and used the hole puncher to make colored ‘ornaments’ to glue on.

To make:

  1. Angle cut the long sides of the green paint chips to make tree shape
  2. Punch a hole at the top and string your ribbon through
  3. Cut the brown chips or paper into strips for the tree trunk and glue onto the back with the color side facing out
  4. NOW onto the decor! Go to town with whatever you have.  Use glitter glue to draw tinsel, glue on ornaments, and add stickers.  These trees can be anything kids can imagine.  Metallic markers work great for drawing ‘strings’ for lights.

Since I was doing this as a classroom party project I used a sectioned Rubbermaid container and set up the craft for easy access to a small group during center time.

Portabella Pizzas

Portabella Pizzas

To be honest…I do not love pizza. I really don’t even like it. – at all – What I do love? PIZZA TOPPINGS! You know how kids usually leave the crust? Well that’s me. Except I leave the whole slice of pizza, minus the toppings.

Now… I know what you’re thinking. “Who the heck doesn’t love a good slice of pizza?” Let’s just settle this now & I’ll send myself to the corner.  Buying pizza and just eating the toppings, what a waste!

So… low and behold: my new best friend. PIZZA TOPPING PIZZAS!

Ingredients:

  • Portabella mushroom caps
  • Low carb marinara sauce
  • Mozzarella cheese (I use fresh and cut thick slices)
  • Pizza toppings of choice (for these I just did fresh tomato, but I use mini pepperonis, too)
  • Olive oil

Steps:

  1. Preheat oven to 400 degrees F
  2. Using a spoon, remove the ‘fins’ inside the mushroom caps
  3. Rub the mushroom caps in olive oil and place top down on a nonstick cookie sheet
  4. Fill mushroom caps with marinara and pizza toppings of choice
  5. Roast in oven for 20 minutes

Low Carb Pepper Nachos

Low Carb Pepper Nachos

Nachos. Is there anything better?  I love a good crispy, salty tortilla chip. Unfortunately with eating low carb, they are not in my wheelhouse.  So why not get creative? Peppers as chips it is!

Ingredients:

  • 1 lb. Ground Beef
  • Taco Seasoning
  • Bell Peppers, seeded & cut into quarters (or sweet peppers cut in half)
  • Cheese, shredded

Steps:

  1. Preheat oven to 400 degrees F
  2. Brown meat mixed with taco seasoning, until cooked through (I make my own seasoning using chili powder, cumin, minced onion, onion and garlic powder, salt and pepper)
  3. Place peppers in a baking dish and fill with browned meat, top with cheese
  4. Bake in oven for 25 minutes, until peppers are fork soft and cheese is melted

Children’s Book Advent Count Down

This year, I was wanting to do an Advent style count down to Christmas.  Looking for a way to start a new tradition that both kids would enjoy and find interactive, I found several ideas for a book count down.

Using a combination of books we already have and adding a few new ones, we are going to do a book a night leading up to Christmas Eve.  We have already established the tradition of a new Christmas Book and new Pajamas under the tree on Christmas Eve so this plays into that PERFECTLY.

 

Find a basket or bin to hold your books.  Wrap up each one individually with a number attached counting down the days to Christmas.  The kids can unwrap one book each night leading to Christmas.  Since we have a nightly school commitment of 15 minutes of reading this is perfect for helping Nolan stay motivated with his reading minutes.

Let me be clear when I say this one thing…I do NOT love broccoli. It’s a love-hate relationship. This salad…HAS CHANGED MY MIND.

First, I am a firm believer in: food should be colorful. & THAT is this salad!

The broccoli is tender, the dressing is creamy. Savory bacon & crunchy sunflower seeds. Plus cheese! If you don’t LOVE cheese, we can’t be friends.

Ingredients:

  • 2 c. Broccoli, chopped
  • 1/4 c. Red Onion
  • 1/4 c. Finely Shredded Cheddar
  • 1/4 c. Bacon Bits
  • 1/4 c. Sunflower Seeds
  • 1/3 c. Mayo
  • 2 tbsp. White Vinegar
  • 1 tbsp. Swerve Sweetener (I used confectioners because it;s what I had on hand, but you could use granular!)
  • Seasonings to taste (I used black pepper, garlic powder and cayenne)

(See… I told you! Colorful is better.)

Steps:

  1. Mix together mayo, vinegar, swerve and seasonings
  2. Put broccoli, onion, cheese, bacon bits, sunflower seeds and dressing into a bowl, mix together
  3. Refrigerate at least one hour then serve!

Parmesan Chicken Tenders

Parmesan Chicken Tenders

Chicken tenders are my favorite!

When I’m sick, what do I want? Chicken tenders. Got my wisdom teeth out, the first thing I eat? Chicken tenders. You get the point, right? Chicken tenders = <3

Now that I’ve started keto it killed my chicken tender vibe.  I had to come up with a way to bring them back into my life. So here we are — an absolutely delicious, low carb way to have them anytime I want!

Ingredients:

  • 1 lb. Chicken Tenders, fresh or frozen (thawed)
  • 1/2 c. Mayo (I use Primal Kitchen – Avocado Oil Mayo)
  • 1/4 c. Parmesan Cheese, shredded
  • 1/4 c. Almond Flour
  • Seasonings to taste (I used black pepper, garlic powder, pink Himalayan salt and cayenne)

Steps:

  1. Preheat oven to 400 degrees F
  2. Pat chicken dry with a paper towel, then season
  3. Combine Parmesan and almond flour, mix well
  4. Coat chicken in a thin layer of mayo. (Now I know what you’re thinking… WHAT?! But hear me out. This acts like the egg when frying chicken; if you think about it, mayo is just eggs and oil. It also makes the chicken tender and keeps it juicy! Tip: This part gets just a little messy, I highly suggest using gloves – NO MESS!
  5. Once chicken is coated, dredge in the almond-parmesan mix
  6. Bake on a nonstick cookie sheet at 400 for 15-20 minutes
  7. Serve with your favorite dipping sauce

Anyone that knows me, knows these two things: My first love is chicken tenders & my second is HOT SAUCE! (bonus: most hot sauces have no carbs)  

I also love all things nitfy. When I saw this “Hot Stuff” sauce cup at Hobby Lobby. I HAD TO HAVE IT! – it completes me –

Keto Peanut Butter Cups

Keto Peanut Butter Cups

Some days I feel that there aren’t enough sugary things to get my through the day.  “Give me all the sugar!” Unfortunately with doing Keto, that’s not really an option.

These though, SO EASY & cute! Plus the mold I found was on clearance for 60¢!

It doesn’t get much better than cute & clearanced,…right?!

Ingredients:

  • 5 oz. Lily’s Baking Chips (about half a bag)
  • 1/4 c. Peanut Butter (I like Santa Cruz and Smuckers, just peanuts and salt)
  • 1-2 tbsp. Swerve Sweetener Confectioners (to taste)
  • 1 tbsp. Butter

Steps:

  1. Melt half of the Lily’s Baking Chips with 1/2 tbsp. of butter (about 30 seconds)
  2. Spoon equal amounts of melted chocolate into the bottom of the molds, refrigerate for 15-20 minutes (until hardened)
  3. Mix together Swerve Sweetener and peanut butter, layer on top of set chocolate and refridgerate another 15 minutes
  4. Melt the last of the Lily’s Baking Chips and butter, pouring on to the peanut butter
  5. Refrigerate until set & enjoy!

Sheet Pan Maple Shrimp Hash

Sheet Pan Maple Shrimp Hash

Shrimp is my go-to. Especially if I have had a carb or fat heavy day. This meal is both of those & shrimp makes a great addition! Plus, who doesn’t love an easy sheet pan meal?! I call them cheat-sheet meals.

Now… usually hash includes potatoes, but here I substituted butternut squash accompanied by brussel sprouts & bacon; because everything needs bacon. Everything is better with bacon.

Ingredients:

  • 1 pound of shrimp, peeled and deveined
  • 12 oz. Brussel Sprouts, cut in half
  • 12 oz. Butternut Squash, cubed
  • 4 slices of bacon, chopped
  • 4 ounces of mushrooms, halved or quartered
  • Minced Garlic
  • Olive Oil (I used garlic infused)
  • 2 tbsp. Lakanto Maple Flavored Sugar-Free Syrup
  • 3 tbsp. Coconut Aminos
  • 1 tbsp. Swerve Sweetener Brown
  • Salt & Pepper
  • Chili Flake

Steps:

  1. Preheat oven to 400 degrees F
  2. Mix together minced garlic, chili flake, Lakanto Maple Flavored Sugar-Free Syrup, Coconut Aminos and Swerve Sweetener Brown
  3.  On a nonstick sheet pan spread out brussel sprouts, cubed squash, mushrooms and shrimp
  4. Pour sauce over veggies and shrimp, gently toss and spread in a single layer then sprinkle bacon over top
  5. Roast for 20-25 minutes

Keto Snickerdoodles

Keto Snickerdoodles

These are my third cookie attempt since I’ve started Keto…& I am pretty certain that they’re my favorite yet!

These are flavorful, soft and low carb.  Is this even real life?!

Ingredients:

  • 1 c. Almond Flour
  • 1/4 c. Coconut Flour
  • 1/4 c. Swerve Sweetener + 2 tbsp. (I used the confectioners for this recipe)
  • 1/4 c. Swerve Sweetener Brown
  • 1 tsp. Baking Soda
  • 1 tsp. Cream of Tartar
  • 1/4 tsp. Pink Himalayan Salt
  • 1. tbps. Heavy Whipping Cream
  • 1/2 tsp. Sugar Free Vanilla
  • 1/2 c. Butter, softened
  • 1 Egg

Steps:

  1. Cream together Swerve’s butter, vanilla, heavy cream and egg
  2. Slowly add the dry ingredients and mix until just combined
  3. Chill dough for 1 hour
  4. Preheat oven to 400 degrees F.
  5. Mix together 2 tbsp. Swerve confectioners and the cinnamon

  6. Using a small cookie scoop, scoop cookie dough into balls and roll in cinnamon-Swerve mix
  7. Place on a nonstick cookie sheet and bake for 8 minutes
  8. Let cool for 5 minutes then transfer to a cooling rack
  9. Viola! Enjoy the pillowy goodness.

Tip: To quickly mix your cookie dough, try mixing it in a Ninja blender. SO EASY! (I would have used mine… but I didn’t do the dishes yet… shh!). Another great tip, if you don’t have a nonstick cookie sheet, try these out.

Mummy Juice Boxes

Turn ordinary juice boxes into easy an fun Halloween Treat.  Such a great inexpensive item to hand out for a classroom treat or for a trunk or treat event!  Get the kids involved and have a fun time decorating these mummies!

What you need:

  • Juice boxes
  • Scissors
  • Hole Punch
  • White Vinyl Electrical Tape (or medical gauze tape if not keeping chilled)
  • Googly Eyes
  • Hot Glue Gun

To Make these:

  1. Remove the straw from juice box and set aside.
  2. You will need to cover the top first.  Using 3″ pieces layer across the top.  When you reach the spot for the straw to be inserted, use a hole punch to put a hole into the tape.  Carefully line it over the straw punch hole.
  3. Using your roll of tape, start at the bottom and work your way up wrapping it up tightly.  Overlap slightly and use some angles to give a good ‘mummy’ effect.
  4. You can use a hot glue gun to apply the googly eyes or look for self adhesive ones!  Take one more 3″ strip of tape and angle across the eyes to give the peeking eye look.
  5. Reattach the straw to the back with a narrow piece of tape.
