Irresistible Snickerdoodle Blondies

Irresistible Snickerdoodle Blondies

These bars are the spot on deliciousness of a fresh baked snickerdoodle without the work of rolling dough into balls and dipping into cinnamon & sugar.  Not only are these already fast to mix up, you don’t even need to soften butter! You start with MELTED butter!  Talk about wham bam, done!  These tasty treats will be the hit at any family gathering or potluck.

Very important! DO NOT skip the cream of tarter (available at all grocery stores in the spice/baking aisle).  This is what gives the cookies their distinctive tart/slightly sour background flavor setting them apart from a regular sugar cookie.

What you need:

  • 1 cup butter melted & cooled *
  • 2 cups granulated sugar
  • 2 Tablespoon milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 3/4 cups flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon cream of tartar
  • 3/4 teaspoon salt

Topping:

  • 3 tablespoons sugar
  • 1 1/2 teaspoon cinnamon
    Mix these together and set aside

Make It:

  • Preheat oven to 350° F
  • Grease a 9×13 Pan (I used a glass dish)
  • In a large bowl (or stand mixer bowl) combine melted butter, sugar, and milk.  Mix until very well combined and slightly fluffy
  • Add in eggs and vanilla.  Combine
  • Add flour, baking powder, cream of tartar and salt.
  • Slowly stir dry ingredients into butter mixture until incorporated.
  • Spread batter evenly into prepared pan
  • Sprinkle with prepared cinnamon & sugar topping
  • Bake in oven for 25-30 minutes until edges are just browned and a toothpick comes out clean or with a few crumbs (not wet batter).  If using a dark or metal pan, be sure to check doneness around 20-22 minutes as it may bake faster and brown more.

These stay fresh for 2-3 days.  If any of these remain more than a few days, refrigerate or freeze leftovers for best shelf life and flavor.

* I poured the melted butter into my stand mixer fitted with a paddle attachment and whipped on low until cool.  About 2 minutes.

Impossibly Easy Coconut Pie

Using ONLY your blender turn a few ingredients into an AMAZING pie!  and, GUESS WHAT?? No rolling out pastry dough!  Like magic, the ingredients settle perfectly as it bakes; creating a crust, delicious custard filling, and golden coconut top!

This takes less than 5 minutes to mix up and will not disappoint in flavor!

What you need:

  • 1 (14-ounce) can Sweetened Condensed Milk (NOT evaporated milk)
  • 1 ½ c. water
  • 1/3 c. biscuit baking mix (Gluten Free Works, Also)
  • 3 eggs
  • 1/4 c. butter, softened
  • 1 ½ tsp. vanilla extract
  • 1 c. flaked sweetened coconut + addition for sprinkling on top

Make it:

  1. Preheat oven to 350°.
  2. In blender bowl, combine all ingredients.
  3. Blend on high speed 3 minutes.
  4. Pour into greased 9 ½ or 10 in Pie Pan; let stand 5 minutes.
  5. Sprinkle with additional coconut.
  6. Carefully place in oven (I prefer to place on a baking sheet so it is easier to put in and out of the oven)
  7. Bake 40 – 45 minutes or until knife inserted near edge comes out clean and pie is set.  It will still slightly jiggle in the pan but is no longer liquid.

Serve cool, with whipped cream if desired.

Refrigerate any leftovers!

Copycat Theme Park Churro Bites

Since the Parks are closed, why not bring a little of the magic to your own kitchen?  Disney has released several of their TOP SECRET recipes to the public to keep us all feeling like we can bring a bit of the parks home, even when we can’t visit!  We gave the Churro Bites a whirl and boy, they did not disappoint!

Don’t let the steps fool you, this is REALLY easy to make and comes together in snap! The chocolate dipping sauce is totally optional but adds a fun component and helps this feel extra special!

What you need:

  • 1 c. water
  • 8 Tbsp. Butter (1 stick)
  • 1/4 tsp. salt
  • 3/4 tsp. ground cinnamon, divided
  • 1 1/4 cups all-purpose flour
  • 3 eggs
  • 1/2 cup sugar
  • Oil for Frying

Make them:

  1. Combine water, butter, salt, and ¼ teaspoon cinnamon a sauce pan over medium heat.  Bring to a rolling boil.
  2. Reduce heat to low.
  3. Add flour & stir vigorously until mix forms a ball. Remove from heat & let rest for 5-7 minutes
  4. Add eggs, one at a time, and stir until well combined (optional use a stand mixer for this step, its a game changer!)
  5. Mix sugar and remaining ½ teaspoon cinnamon in medium bowl.
  6. Using caution, heat about 2 cups of oil in medium skillet or 1-quart saucepan over medium-high heat or until temperature reaches 350˚.
  7. Fill a large piping bag or zip top bag fitted with large star tip.
  8. Pipe 1-inch strips of dough over saucepan, cut with knife, and drop into hot oil. Repeat until churro bites fill saucepan with room to fry.
  9. Fry churro bites until golden brown (approximately 5 minutes). Remove with slotted spoon or mesh spider strainer and lay on paper towel to drain.
  10. While still warm toss in churro bites until coated.
  11. Place on serving plate and serve with favorite dipping sauce.

Note: No piping bag or tips?  Simply put in a ziptop bag and snip off a corner.  You won’t have the traditional little grooves, but will fry and taste exactly the same!

Chocolate Dipping Sauce

What you need:

  • 3/4 c. semisweet chocolate chips
  • 1/4 c. (1/2 stick) butter
  • 1/2 tsp. ground cinnamon
  • 2/3 c. granulated sugar
  • 2/3 c. evaporated milk

Make It:

  1. In a small saucepan combine the chocolate, butter, and cinnamon
  2. Over medium heat and cook, stirring often, until melted through.
  3. Stir in the sugar, and gradually stir in the evaporated milk.
  4. Bring to a boil, reduce heat, and simmer over low heat for 8 minutes, stirring constantly.
  5. Remove from heat, let cool slightly before serving with the churros for dipping.

Low Carb Chocolate Chip Cookies

Does anyone else think chocolate chip cookies are a life essential? No? Just me?!

These cookies are by far my favorite yet. They are fluffy, packed with flavor and so soft.

Ingredients:

  • 1.5 c. finely ground almond flour
  • 1/2 c. salted butter, melted
  • 1 oz. cream-cheese
  • 1 tsp. vanilla extract
  • 1 egg
  • 1/2 tsp. baking powder
  • 1/2 tsp. xanthan gum – I use this
  • 2/3 c. sugar-free chocolate chips – I use these
  • 1/4 c. sugar substitute – Swerve Granular
  • 1/4 c. brown sugar substitute – I use Swerve Brown
  • 1/2 tsp. instant coffee grounds, finely crushed

Directions:

  1. Preheat oven to 325 degrees F
  2. Cream together butter, cream cheese, vanilla, egg and sugar substitutes then add baking powder, xanthan gum and instant cofee
  3. Once combined slowly add in almond flour, 1/4 c. at a time until a dough has formed then add the chocolate chips
  4. Using a large cookie scoop, scoop the dough evenly apart onto a non stick sheet pan – this recipes yields 12 cookies
  5. Bake for about 18 minutes, then allow to completely cool before removing from cookie sheet

Chocolate Dipped Peanut Butter Cookies

For this recipe, I was inspired by our 3 Ingredient Peanut Butter Cookies and my want for oatmeal cookies.
Unfortunately oats are pretty high in carbs, so I decided to use chunky peanut butter for texture.
Then it came to me, everything is better covered in chocolate. & don’t lie… we both know you we’re thinking it to!

Ingredient:

  • 1/2 c. smooth peanut butter
  • 1/2 c. chunky peanut butter
  • 1/4 c. sugar substitute – I use Swerve Granular
  • 1/4 c. brown sugar substitute – I use Swerve Brown
  • 1 egg
  • 1/2 c. sugar free chocolate chips – I use these
  • 1 1/2 tbsp. butter, softened

Directions:

  1. Preheat oven to 350 degrees F
  2. Combine peanut butters, 1 tbsp. butter, sugar substitutes and egg together in a large bowl.
  3. Using a cookie scoop, scoop the dough onto a baking sheet evenly spaced apart
  4. Bake for 10-12 minutes, let them completely cool
  5. While cookies are cooling, melt the chocolate chips and remaining butter together until smooth
  6. Dip cookies half way in chocolate and place on parchment paper until chocolate is set – I put them in fridge to help accelerate this step

KETO Egg Salad Tacos

Now, tacos may be a little far fetched here…but mind over matter, right?!

Ingredients:

  • Cheese slices – I used provolone
  • 3 eggs
  • 1/8 c. mayo – I use this
  • Yellow mustard, to taste
  • Everything Bagel Seasoning

Directions:

  1. Boil eggs until hard, about 13 minutes, then let them cool in an ice bath. Check out this hard boiled egg hack! 
  2. Peel eggs and coarsely chop, mixing in mayo and mustard until desired consistency
  3. Scoop egg salad mix into your “taco shells” (cheese slices)
  4. Sprinkle with your favorite seasoning – I used Everything Bagel Seasoning!

KETO French Toast "no-toast" bake

French Toast “no-toast” Bake

I have never really been a bread lover, even with being Italian.
French toast though, my love is real!
With this “no-toast” bake, you can have all of flavor and none of the guilt.

Ingredients:

  • 8 eggs, medium
  • 8 oz. cream-cheese, softened
  • 2 tbsp. sugar substitute – Swerve Confectioners
  • 2 tbsp. butter, softened
  • 1 tbsp. low carb syrup, I use this.
  • 2 tsp. vanilla
  • 1 tsp. cinnamon, or to taste

Directions:

  1. Preheat your oven to 350°
  2. Mix all ingredients together, I used my Nutra Ninja to ensure everything was well blended
  3. Butter the bottom and all edges of an 8×11 baking dish, pour the batter in and bake for approximately 20 minutes or until a toothpick pulls out clean

Once cool, I cut mine into strips and did a quick pan fry to give it that “authentic’ french toast feel!

No-Fuss Cheese Stix

These cheese sticks are so easy and so good!
Being from Wisconsin, I am fairly certain there is no such thing as too much cheese.

Ingredients:

  • 1 c. finely shredded mozzarella
  • 3/4 c. shredded parmesan
  • 1/4 c. grated parmesan
  • 1 egg
  • 2 tsp. garlic powder
  • Parsley flakes for garnish

Directions:

  1. Mix all ingredients together, be sure the mixture is well incorporated
  2. Spread mixture out on to a parchment lined sheet pan, bake for 20-25 minutes until golden brown

I use Rao’s Marinara to dip mine in. This is one of my favorite low carb sauces!

Keto egg Crepes

Egg Crêpes

Crêpes are honestly one of my favorite foods!
This recipe has become a staple in my house. These are versatile and so easy to make.
Try trading out the seasonings to make either sweet or savory crêpes.

Ingredients:

  • 6 eggs (I used medium so it was less eggy)
  • 4 oz. cream cheese, softened
  • 1 tbsp. sugar substitute – Swerve Granular
  • 1/2 tsp. vanilla
  • 1/4 tsp. xanthan gum , optional – I use this 
  • Cinnamon, to taste

Filling:

  • 3 tbsp. mascarpone cheese
  • 1 tbsp. sugar substitute –Swerve Confectioners
  • Banana Extract to taste (about 1/4 tsp.)

Directions:

  1. Mix all ingredients together, I used my Nutra Ninja to ensure everything was well blended
  2. Heat your crepe pan on medium heat, before pouring batter into the pan add a small amount of butter. If you don’t have a crêpe pan, a 10″ or even 8″ skillet works too
  3. Lift pan off heat and pour in 1/3 c. of batter, continually swirling around the pan to get a thin and even crêpe
  4. Place back on the heat, once you start to see the batter firm flip your crêpe for even cooking (about 5 total minutes)

I sprinkled mine with Swerve Confectioners  and cinnamon, with a quenelle of filling on the side!

KETO Faux Fettuccine

Being low carb & Italian is a love hate relationship. I want pasta for every meal! This faux fettuccine helps achieve all of the flavor with next to none of the carbs!

Ingredients:

  • 4 eggs
  • 4  oz. cream-cheese, softened
  • 1/8 c. parmesan
  • 3 tbsp. chicken bone broth
  • 2 tbsp. butter
  • 1 tbsp. heavy cream
  • Garlic powder, to taste
  • Pinch of salt & pepper

Directions:

  1. Preheat oven to 350°
  2. Mix together eggs, 2 oz cream-cheese and salt – I used my Nutra Ninja to ensure everything was well blended
  3. Line a baking sheet with parchment paper and pour on the mixture – any size baking sheet can be used here, this will determine the thickness of your “noodle”
  4. Bake until set, about 6 minutes, then let completely cool
  5. While noodles are baking, heat butter and chicken broth in a pan until it starts to simmer. Once simmering, add the heavy cream and remaining cream cheese stirring until melted and combined. Then stir in pepper, garlic powder and parmesan cheese
  6. Once cooled, roll the egg sheet, similar to a sushi roll and cut into strips – achieving the fettuccine noodle look
  7. Reheat noodles by tossing in sauce & enjoy
