French Onion Meatballs

French Onion Meatballs

This delicious main dish tastes just like a bowl of hot, gooey cheese covered French Onion Soup!  The ground chicken makes for a very tender and mild meatball that soaks in all the amazing french onion ‘soup’ gravy.  I served this with roasted potatoes to soak up every bit of caramelized onion goodness! Because I was so excited to try this dinner, I forgot to snap a photo of the finished plate!  So until I make it again, (yes I am FOR SURE making it again) the pan of simmering meatballs will have to do!

What you need:

Meatballs:

  • 1 lb. ground chicken (or turkey)
  • 1/2 c. shredded Swiss cheese
  • 1/4 c. bread crumbs
  • 1 large egg, beaten
  • 1 Tbsp. (1 clove) minced garlic
  • 1 tsp. salt
  • Freshly ground black pepper

French Onion Gravy:

  • 4 tbsp. butter
  • 2 large onions, sliced
  • 1 Tbsp. (1 clove) minced garlic
  • 2 c. beef broth
  • 2 tsp. freshly chopped thyme*
  • salt
  • Freshly ground black pepper
  • 1 1/2 c. shredded Swiss cheese

Make the Meat Balls:

  • Preheat oven to 400° F.  Line a baking sheet with parchment paper and lightly grease the paper
  • In a bowl, combine ground chicken, cheese, bread crumbs, egg, garlic, salt and pepper.
  • Form into 12 meatballs and place on a baking sheet.  Bake until golden and cooked through.  About 20 minutes.

Make the gravy:

  • While meatballs are baking:
  • Over VERY low heat add onion and butter.  Caramelize the onions for about 25 minutes stirring occasionally and cook until deep golden brown and tender.
  • Add minced garlic and thyme.  Cook 5 more minutes
  • Add broth, salt, pepper and increase heat to med/low.
  • Bring to a boil, lower heat, and reduce for about 10 minutes or until slightly thickened.
  • Add cooked meatballs and heat them back through.
  • Top with remaining shredded cheese and allow to melt.

*Rather than chopping the thyme, I just tossed in a few sprigs with the onions as they cooked and let them simmer in the broth.  Just remove the stems before serving!

Chocolate Chip Blondies

Chocolate Chip Blondies

What you need:

  • 6 tablespoons butter, softened
  • 1 c. packed brown sugar
  • 2 eggs
  • 1 t. vanilla
  • 1 1/4 c. flour
  • 1 t. baking powder
  • 1/4. t. salt
  • 1 c. semi sweet chocolate chips
  • 1 c. additional chips of choice (dark chocolate, white chocolate, peanut butter, butterscotch, etc!)
  • 1/2 c. chopped pecan (optional)

Make them:

  • Preheat oven to 350° F
  • Grease an 8×8 pan
  • Cream butter, sugar & vanilla until fluffy
  • Mix in eggs
  • Add remaining dry ingredients and mix just until combined. Dough is very soft and sticky.
  • Fold in chocolate chips and nuts
  • Spread into baking pan.
  • Bake for 20-25 minutes until browned on top, the bars start to crack on top and pull away from sides of pan.  DO NOT OVER BAKE! You want this to be gooey and soft inside!
  • Serve Warm.

Note for this batch, I used a combination of semi sweet, dark and salted caramel chips.  So perfectly rich and the caramel chips added a yummy extra salty punch to the bars!

Sweet & Savory Chicken Wings (The Secret Ingredient – Lemon Gelatin!)

Sweet & Savory Chicken Wings

A follower on our Facebook Page shared this recipe with me. I will admit, I was very skeptical when I saw lemon gelatin as one of the ingredients, but to my whole family’s surprise these turned out DELICIOUS! We liked them so much that I am considering trying to change the recipe and make them with orange gelatin – an Orange Chicken?

I did not add the poppy seeds because my son would not try them if I did.  If any of you do, I would love to hear your thoughts!

Ingredients:

  • 1 Cup Pineapple Juice
  • 1 Cup Soy Sauce
  • 3 Pounds Chicken Wings
  • 1 Box  (1 – 1/2 Ounces) Lemon Flavored Gelatin
  • 2 Tablespoons Poppy Seeds (Optional)

Directions:

  • Preheat the Oven to 350° F
  • In large bowl, mix pineapple juice & soy sauce.
  • Add wings to a large bowl or Ziplock bag and marinate for an hour in the fridge.
  • Line a rimmed cookie sheet with foil and arrange wings in a single layer. Pour 1/2 c. of the marinade over the wings, then sprinkle with half the lemon gelatin.

  • Bake for 30 Minutes.
  • Remove from oven and flip wings over.  Sprinkle with remaining gelatin & poppy seeds if using.
  • Bake until golden brown, about an additional 30 minutes. You want the internal temp. to be AT LEAST 165° F

Snow Ice Cream!

Turn the snow day into a fun ICE CREAM MAKING party! Yes, I said ICE CREAM!  Use some of the generous gift from Mother Nature to mix up a quick easy treat for your kids!

What you need:

  • 1 c. milk
  • 1/3 c. granulated sugar
  • 1 t. vanilla extract
  • 8 cups clean snow or shaved ice (more or less depending on the snow texture)

Make it:

In a REALLY large bowl mix milk, sugar, and vanilla together until combined. Run out and grab some CLEAN, FRESH snow and quickly stir it into the milk mixture until you reach your desired consistency.  Start with about 7 cups/scoops and add more as needed.  Work fast, this will start to melt quickly.

Top with sprinkles for a fun treat to beat the snowed in blahs!

Make sure your snow is fresh and fluffy.  Hard, old snow will not give you a nice smooth texture!

Paint Chip Christmas Tree Ornaments

Paint Chip Christmas Tree Ornament

Whether looking for a classroom project, a grandparent’s gift or just something to keep the kids busy these VERY SIMPLE Christmas Trees will be a hit.  After raiding your local home improvement store and using mostly things you have on hand, things will come together in a snap!  You could even have the kids make these up and use them as gift tag labels!

Be sure to ask your store before taking the chips! I got mine from Lowes, and they had no problem with me taking as many as I needed!

What you need:

  • Sectioned Paint Chips in GREENS
  • Brown Paint Chips or Construction Paper
  • Hole Punch
  • String or Ribbon
  • Elmer’s Glue
  • Stickers, Sequins, Buttons, glitter glue, metallic sharpies, etc to decorate
  • I grabbed a few other paint chips (pinks, blues, purples, reds, yellows, oranges) and used the hole puncher to make colored ‘ornaments’ to glue on.

To make:

  1. Angle cut the long sides of the green paint chips to make tree shape
  2. Punch a hole at the top and string your ribbon through
  3. Cut the brown chips or paper into strips for the tree trunk and glue onto the back with the color side facing out
  4. NOW onto the decor! Go to town with whatever you have.  Use glitter glue to draw tinsel, glue on ornaments, and add stickers.  These trees can be anything kids can imagine.  Metallic markers work great for drawing ‘strings’ for lights.

Since I was doing this as a classroom party project I used a sectioned Rubbermaid container and set up the craft for easy access to a small group during center time.
