Chocolate-Zucchini Muffins

(Makes 12 Muffins)

These muffins are DELICIOUS! NO Eggs or Oil! To learn some other ideas for Zucchini, Check out “How to save a FORTUNE with Zucchini.”

Ingredients

  • 1¼ cups whole wheat pastry flour
  • ¼ cup unsweetened cocoa
  • 1¼ tsp baking powder
  • ¾ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 whole banana, mashed
  • ½ cup raw sugar
  • ½ cup unsweetened applesauce
  • ¼ cup plant-based milk
  • 1 tsp vanilla extract
  • 1 cup shredded zucchini
  • ½ cup raw sugar (optional)

Instructions

Preheat oven to 350F. Grease muffin pan and set aside. If using paper liners, lightly spray inside of liners with cooking spray to prevent sticking. Whisk flour, cocoa, baking powder, baking soda, salt and cinnamon together. In another bowl, cream mashed banana with applesauce and sugar (use extra 1/2 cup for a very sweet, dessert-like muffin). Add in soymilk, vanilla, zucchini and any other optional add-ins you might like such as vegan chocolate chips or chopped raw walnuts. Stir until evenly combined. Add flour mix to wet mix in 3-4 batches and stir until just combined. Spoon batter into greased muffin pan and bake 18-25 minutes, or until a toothpick inserted into the center comes out clean.

Miley Cyrus, SHE DID WHAT?!?

Miley Cyrus – SHE DID WHAT?

Yup, that was the first words out of my mouth when my husband told me Miley Cyrus shaved her head. I was shocked, intrigued, and I guess a little sad, sad because she has always had such beautiful hair.

Any of us who have children, have watched this young lady grow up right in front of our eyes on the Disney Channel as Hannah Montana, that crazy fun young girl full of spirit, life and mischief. Since the age of 12 when she first entered our living rooms we have all loved her and enjoyed watching our children look up to her and be inspired by her.

Though we all knew it was coming, it was very sad to see her leave her role as Hannah last year in 2011, and I will be the first to admit, though my child is now 19 (same age as Miley) we all watched the final episode, and yes even shed a few tears.  But it was expected, she was now 19, Hannah had to graduate and continue on with new adventures in her life,  just like Miley had to do. She would move on, keep her Southern values and become a well-known Music Star. (Or so that is what we all wanted hoped.)

Next thing we know pictures are surfacing of once innocent Miley smoking out of a bong, very odd pictures of her and her father are all over the news, and she is engaged to be married? Is this the next childhood star going down the wrong path? Is she making the right choices or just a typical teenager trying to find their way in this world? I do not think any of us can say we have always made the right decisions in life can we? Life is all about making mistakes and learning from them.

Am I disappointed she shaved her head and bleached it? I guess not so much disappointed as concerned for her. Worried there is a little girl who lost her childhood and right now is doing everything she can to find out exactly who she is and where she wants to go in her life, for seven years, from the age of 12 to 19 she has had to be the Disney Good Girl, I think she deserves the chance to spread her wings and fly and find out who she really wants to be in life.

So as a Mother, I may not agree with the skimpy outfits, the tattoos and radical changes, but as a Mother of a 19-year-old, and being a teenage girl at one point myself, I do understand, I will try to not  judge, and I will wish her all the success in finding what she is looking for in life <3

Recycle those Odd or Old Socks

The Washer Monster is at it again, an odd sock here, and odd sock there! Wouldn’t you like to know where they go?

We have some suggestions for those odd or old socks that may be accumulating in your house! They have SO MANY more uses then just wearing them on your feet!

1) Make a Dust Rag – Adult size socks fit perfectly over your hand. Dip them in hot soapy water, and clean away! Or spray cleaner right on them while on your hand and dust your coffee table, furniture, and more! (I LOVE using socks on my hands for mini blinds)

2) Sock door Draft – These work best with Knee highs, especially wool socks! Here are step by step directions.

3) Heating Pad/Muscle Relaxer – Fill your sock with cheap rice and tie or sew closed one end. Place in the microwave for one minute WITH a glass of water. (Not in the glass, you just need the glass of water for the moisture so that your sock does not start on fire) After a minute check if it is hot enough for you, if you need it a bit warmer, go in 20 second intervals. Place on the back of your neck or achy joints. You can reuse it over and over again.

4) ipod Arm Band Holder – Do not spend $20 or $30 on these! Take an old tube sock, Cut off the top, fold over the edges, and use it to hold your ipod as you are jogging, walking, or working out!

5) Finger  Nail Polish Remover – Is it an old sock not good enough for other uses? Cut it up and use it to remove finger nail polish! No cotton ball fibers getting stuck on your nails that way!

6) Gardening or Work Shop Soap Holder – Put a bar of soap in an old sock and tie it to the outside faucet or utility room faucet. Works GREAT when you have some dirty hands to clean and it is always handy!

7) Make some Cat Toys – Take an old sock, add a bell and some plastic bags, close it up, and they will have LOADS of fun! The noise gets them every time!

8  Wrap some Breakables – Are you moving or have to store some breakables? Use old socks! They work PERFECT! (Also works great for breakable Christmas Ornaments)

9) Girls Socks – Do you have some frilly pretty socks? Turn them into doll clothes! Use your imagination.

10) Toy Holder – Have a bunch of little pieces to a toy that keeps getting lost in the toy box? Use an old sock to store them in.

11) Keep little hands Toasty Warm – Old socks work GREAT under mittens in the winter time! They give the little ones a little extra warmth!

12) Protect Your Shoes – Put socks over shoes to protect them during storing or while traveling to keep them from getting your clothes dirty in your suitcase.

DO NOT USE OLD SOCKS for Dog Toys. Reason being, Once you give them a tied off old sock they will sometimes think it is ok to chew on your other GOOD Socks.

We all have these plastic hangers in our closet, Why not put them to some good use?

Tired of your cookbook getting messy with food splatter as you cook? Do you get a little kink in the neck as you look down at the recipe over and over again? Hang it right on your cupboard door next time! No having to look down, no having to wipe off flour, food, etc. after you are done preparing your meal!

Simply clip your cookbook or recipe to your plastic hanger, hang it from your cupboard hardware, and after you have everything done and cleaned up, take it back down and put it away!

Another added bonus, it leaves room on your counter for your little one to sit where the cookbook usually would be! We all know how much they LOVE helping us in the Kitchen!

is having to buy diapers.  I know I am looking forward to the
day when my little guy is potty trained.
I was looking for tips and tricks for potty training and ran

Walmart Price Matching

We get several questions on our page on how to price match at Walmart so I decided to give you some tips that I have learned through trial and error.  Please understand that not every Walmart is the same when it comes to price matching, so it is always best to check FIRST before shopping.

You do the price matching at the register when you check out.

First Tip:
Always have the ad with you that you are price matching.  Don’t assume that the cashier will have a copy.  Sometimes they do have them at the register but it isn’t always guaranteed that they will.  If the cashier has to go to another register to locate the ad it will only hold up the line thus making the cashier frustrated and any people behind you irritated because they have to wait.


Second Tip:
Tell the cashier you are price matching BEFORE they start your transaction, and ask if they want the price match items at the beginning or the end of the check out.  This makes your transaction go smoother.

Third Tip:
Make sure the size item you are getting matches the item in the ad.  They will not substitute in most cases.


The Walmart I shop at will NOT MATCH the above type of ad because it does not have a specific price listed.


But they will price match the above store coupon because it has a specific price for the item listed.

I hope these tips help to make it easier for you, and as I stated above it is always best to ask BEFORE shopping because each Walmart is a little different.
