Banana Bread Baked Oatmeal

BANANA BREAD BAKED OATMEAL

 

Quickly turn over ripe bananas into this warm & comforting baked oatmeal that tastes just like a slice of fresh baked banana bread.  It is even gluten free & and can become dairy free with the use of almond milk! This is wonderful warm out of oven or chilled and served the next day as breakfast on the go or a great addition to a lunch box!

Ingredients:

  • 3 medium ripe bananas
  • 1/2 c. brown sugar
  • 2 large eggs
  • 2 t. vanilla
  • 1 t. cinnamon
  • 1/4 t. nutmeg (optional)
  • 1 t. baking powder
  • Pinch of salt
  • ½ c. chopped nuts (pecans, almonds or walnuts)
  • 1½ c. milk
  • 2½ c. old fashioned oats
  • ¼ c. butter (or coconut oil) melted

Instructions:

1. Preheat oven to 350. Spray an 8×8 casserole with cooking spray.

2. In a medium-sized bowl, mash the bananas.

3. Add the brown sugar, vanilla, milk and eggs. Mix well.

4. Add the oats, nuts, baking powder, salt, cinnamon, and nutmeg. Mix well.

5. Stir in melted butter (or coconut oil). Pour into the casserole dish.

6. Bake for 30-35 minutes. Top should be a golden brown and completely set.

7. Serve warm or leftovers taste great served chilled or reheated the next day.

French Onion Dip

French Onion Dip Recipe

What You’ll Need: dip

  • (3) LARGE Onions (I had small ones so I used 8
    small onions)
  • 1 and 1/2 c. Sour Cream
  • (2) cloves of Garlic, minced
  • 2 tbsp. Olive Oil
  • 2 tbsp. Butter
  • 1/4 c. Mayo (& I mean MAYO, not miracle whip)
  • Black Pepper

Directions:

  • Slice onions, thinly
  • Heat butter & oil in pan

  • Add onions to the heated pan, saute onions & garlic until caramelized, let cool completely

  • Mix together caramelized onions, mayo, sour cream onions/garlic and a couple tsp. of pepper
  • Refrigerate & eat with your favorite chips or crackers!

Ranch Tortellini Salad

What You’ll Need for Ranch: pasta salad3

  • 1 c. Lite Buttermilk
  • 1 c. Hellman’s Mayo
  • 1 Hidden Valley Dry Ranch Mix Packet
  • 1/4 tsp. Ground Cayenne Pepper
  • 1/2 tsp. Cracked Black Pepper (or ground is fine)
  • 1/4 tsp. Garlic Powder

…for Pasta Salad:

  • (2) 20-oz. packages of Cheese Tortellini
  • 1 c.Frozen Peas
  • 1/2 c. Cherry or Grape Tomatoes, quartered
  • (6) slices bacon, cooked & crumbled


Directions for Ranch:

  1. Mix all ingredients together and refrigerate

Directions of Pasta Salad:

  1. Cook tortellini noodles according to package & drain
  2. Mix together pasta, peas, ranch, bacon and tomatoes
  3. Refrigerate until cool and ENJOY!

Pineapple Teriyaki Skewers

Pineapple Teriyaki Skewers

What You’ll Need for Skewers:

  • (1) Red Pepper, seeded & cut into 1″ pieces
  • (1) Yellow Pepper, seeded & cut into 1″ pieces
  • (1) Fresh Pineapple, cored & cut into 1″ pieces
  • (1) Onion, peeled & cut into 1″ pieces
  • (6) Chicken Breasts, cut into 1.5″- 2″ pieces
  • Salt & Pepper

…for Sauce:teriyaki

  • 1 c. + 1/4 c. Water
  • 1/2 c. Soy Sauce
  • 1/4 c. Brown Sugar
  • 2 tsp. Minced Garlic
  • 2 tsp. Minced Ginger
  • 2 tbsp. Honey
  • 2 tbsp. Cornstarch

Directions for Sauce:

  1. Combine all ingredients in a sauce pan EXCEPT for 1/4 c. water and cornstarch sauce
  2. Mix together 1/4 c. water & cornstarch in a small separate dish
  3. Begin heating ingredients in sauce pan, then add cornstarch/water mixture
  4. Heat until sauce thickens – let cool before using as a marinade

Directions for Skewers: skewers2

  1. I marinaded my chicken breasts in teriyaki sauce over night – a few hours will do or baste occasionally while cooking
  2.  Start layering peppers, onions, pineapple and chicken on skewers
  3. SEASON generously with salt & pepper
  4. Grill for approx. 20 minutes, turning occasionally – until
    chicken is cooked through skewers1

Switching Views from a Mobile Device

It seems that most everyone uses a mobile device to keep up with coupons and deals these days.  Sometimes, these mobile devices can be a bit tricky when it comes to opening the links we provide.  Here are a few tips and tricks for navigating the mobile world!

Sometimes, opening a link outside of the Facebook App allows easier viewing.  For some, this also lets users print coupons directly to a wireless printer.  Start by opening a link in the Facebook App and see the photos below for instructions.

Certain websites also allow a user to switch from ‘mobile view’ to ‘desktop view‘.  This allows navigation on the site as if you were viewing it from a desktop PC.  Keep in mind that not all websites have this feature. If you have kids or grandkids, you know that bubbles are a must have for summer! But with bubbles comes the mess – sticky hands, multiple containers all over, and don’t get me started on the spills! Then you’re left with a bunch of empty containers and sad kids.  We found a very EASY way to keep the fun of bubbles without the headache and mess.

Head to your local store (we went to Walmart) 1.5 Gallon Beverage Dispenser ONLY $11.43 and pick up a beverage dispenser with a spigot for easy pouring.  Grab some easy stick and peel vinyl stickers to label it so no one gets confused with it being something to drink (lets face it, it could happen!).  Pour all the bubbles you have laying around into the dispenser and put the lid on tight.  Add your stickers to say whatever you want!  Then, make sure you grab a few Red Solo Cups or any other cups you have around the house to empty the bubbles into.  Make sure you keep the bubble wands from your old containers!

When you’re ready to play bubbles, grab a cup and pour in some bubbles and enjoy!

No more wasting and sticky hands, just quick and easy fun!

M&M Pretzel Flowers

M&M Pretzel Flowers

What you need:

flower pretzels

  • White Wilton Candy Melts
  • Pretzel Squares
  • M&M Candies

Directions:

  1. Preheat oven to 225°
  2. Line a cookie sheet with parchment paper
  3. Place pretzels on cookie sheet and top each with a candy melt
  4. Put in oven for 4 minutes
  5. Remove from oven and tap on counter to spread chocolate onto pretzels
  6. Arrange M&M’s to make the flowers. Have fun with the colors – mix and match for a fun variety.
  7. Place in freezer for a few minutes to set the melted chocolate

Pull Apart Monkey Bread

Just a few simple items are needed to make this warm breakfast treat everyone will love.  Set this out warm from the oven and no one will be able to resist pulling a piece off!

Ingredients:

  • 2 Cans Biscuit Dough (7.5 oz. – 10 count cans
  • 1 c. Sugar
  • 1 T. Cinnamon
  • ½ t. Nutmeg (optional)
  • 1 c. chopped nuts (optional)
  • 6 T. Butter – melted

Directions:

  • Spray a Bundt pan thoroughly with non stick spray
  • Mix sugar, cinnamon & nutmeg in a large bowl.  Set aside
  • Cut each biscuit into quarters.
  • Toss the biscuits in the cinnamon & sugar mixture in batches, covering well.
  • If using nuts, sprinkle 1/3 into the bottom of the pan.  Add approximately half the sugar coated biscuits into the pan.
  • Pour half the butter over the biscuits in the pan. Top with additional 1/3 of the nuts and a few teaspoons of the sugar mixture.

  • Place remaining biscuits & nuts and a few teaspoons of the sugar mixture in the pan.
  • Pour the rest of the butter over the biscuits in the pan.
  • Bake in a 350° oven for 20-25 minutes until just baked through and barely brown.
  • Allow to rest for 5 minutes and invert onto serving tray.
  • Serve Warm

What you Need:

  • Wilton Chocolate Candy Melts (or any melting chocolate)
  • Wilton Pink Candy Melts (or bright pink icing)
  • Pretzel Rings
  • Mini Marshmallows
  • Parchment Paper
  • Piping Bags

 

Directions:

  • Arrange pretzel rings on a parchment (or foil) lined baking sheet
  • Carefully melt the chocolate in a glass measuring cup. Pour chocolate into each pretzel ring, filling to the top. If using the Wilton melts, the chocolate can be rewarmed if it starts to set before done filling.
  • Place a marshmallow into each pretzel, near the top, to create the ‘tail’

  • Pour remaining chocolate (or melt more) into a piping bag. To create the bunny feet, carefully pipe small ovals on parchment. I created a template and traced with the piping bag to create a consistent size and shape. Allow to set.
  • Apply a small dab of melted chocolate (to use as glue) on the ‘feet’ and stick onto the pretzels.
  • Melt the pink candies (or use icing) and put in a piping bag. Carefully pipe the pads onto the feet as desired.
    ~~ I found after piping the large pad, using a fork tine, dipped in the melted pink chocolate gave me a much better tiny pad print~~

We all probably have our own chocolate chip cookie recipe that we used, maybe passed down through generations or maybe just one you found online that you love! But, let me tell you this, after you read through this recipe and try this special ingredient, you’ll never go back to the other ways again.  Trust me.  I LOVE chocolate chip cookies, especially when they are light and fluffy and well….chocolately.  (Is that a word? It is now!)

So when you look at this stack of ingredients, you basically see everything you usually use, right? Flour, sugar, butter, baking soda, vanilla….but notice we added something different.  That’s right.  Jell-O Instant Vanilla Pudding Mix. Yes, you read that right! It’s a little addition that makes them so light, fluffy and melt in your mouth delicious!

Recipe:

Here are the basic ingredients you’ll need:

  • 1 cup butter (softened)
  • 3/4 cup brown sugar (packed)
  • 1/4 cup sugar
  • (1) Package Jell-O Instant Vanilla Pudding Mix
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 1/4 cups flour
  • 2 cups chocolate chips (I personally like mine with a lot of chocolate so I add an entire bag!)

Baking Instructions:

  • Preheat your oven to 350 degrees F
  • In a separate bowl, mix together the flour, salt and baking soda.  Set aside until later.
  • In a large mixing bowl (I used my Kitchen Aid Stand Mixer Bowl), cream together the butter, sugar and brown sugar together until completely incorporated.
  • Add the Instant Pudding Mix until well mixed
  • Add eggs one at a time and then the vanilla
  • Add the flour mixture slowly (adding it too fast will make it dry)
  • Mix in the chocolate chips
  • Place spoon fulls of cookie dough on your baking pan (well greased is key!)
  • Bake for 8-12 minutes, depending on your oven, you may need more or less time!
  • Let them stand on your cookie sheet for at least 5 minutes and then move to cooling rack.

Another TIP: Did you know, if you don’t have any Vanilla Pudding Mix, you can use cornstarch? Yup! Simply add 2 teaspoons in with your flour, salt and baking soda mix when you add to the wet ingredients.  It makes them incredibly light and fluffy!
