Micki’s Spicy Bread & Butter Pickles

Micki’s Spicy Bread & Butter Pickles (Refrigerator)

This is my personal recipe I have came up with through trial and error over the last few years. You can reduce the amount of sugar, this is to our personal taste and what the office men love where my husband works.

Ingredients:

  • 4 Pounds Sliced Cucumbers (About two gallon size freezer bags full)
  • 1 Whole Vidalia Onion
  • 1/4 Cup Salt
  • 3/4 Cup Water
  • 4 Cups Sugar
  • 1 Cup Apple Cider Vinegar
  • 1 Cup White Vinegar
  • 6 Jalapenos (For a mild kick)

Directions:

  • Cut four pounds of cucumbers. Slice or Chunk.
    ( I prefer chunks, husband prefers slices, your choice!)
  • Peel and Slice one whole onion
    (I cut in half then slice it up)
  • Combine Cucumbers, Onions, Salt & Water in a covered  bowl. Gently Shake to get all ingredients mixed up.
  • Let stand at room temperature for 2 hours.
    (DO NOT skip this step)
  • In a separate bowl combine vinegar’s and Sugar, Stir well until dissolved.
  • After two hours of cucumbers soaking in water (DO NOT DRAIN) Add cut up Jalapenos to the cucumbers.
    (I HIGHLY recommend when cutting Jalapenos, WEAR GLOVES!)
  • Add Sugar Mixture to Cucumbers, replace lid, and shake to mix well.
  • Refrigerate right away, they are ready to eat after two days!

Enjoy! They will last in the fridge for a month or frozen in Freezer bags for up to 3 months.

Bacon, Egg, & Cheese Brunch Ring

Bacon, Egg, & Cheese Brunch Ring

Ingredients:

  • 4 slices of bacon ( I used about 8 slices)
  • 1/3 cup milk, plus 1 tablespoon
  • 4 eggs (I used 6), slightly beaten
  • 1 can refrigerated crescent rolls
  • 1 cup shredded cheese

Directions:

  • Preheat oven 375 Degrees
  • Line baking pan with parchment paper
  • Precook bacon for about 4 minutes, will continue to cook in oven

  • Combine 1/3 cup milk, eggs, whisk together, cook about 5 to 6 minutes until they are thickened but still moist, they will continue to cook in oven
  • Unroll crescent rolls, arrange crescent triangles with shortest triangle towards the center making an overlapping star shape, leaving 4 inch circle in center.
  • Place cooled bacon on each of the triangles, sprinkle 1/3 of the cheese onto dough, spoon eggs over cheese. Sprinkle 1/3 more of cheese on top off eggs .Pull points of dough over the eggs & cheese and tuck under to create ring.
  • Carefully brush dough with 1 tablespoon of milk, sprinkle last 1/3 of cheese on top.
  • Bake 20-25 minutes or until deep golden brown. cool for 2 minutes.

Serve & enjoy!

One Pan Chicken, Potato, And Bean Dish

Looking for a quick, simple, and very tasty dinner?  You aren’t going to want to miss this one!  So simple and so yummy!!!!

Ingredients

  • 3 Boneless, Skinless Chicken Breasts
  • 1LB small Red Potatoes
  • 2 Cans Green Beans (I used french style)
  • 1 Stick Butter (melted)
  • 1 Package Dry Ranch Dressing Mix (Italian works as well)
  • 1 Small Onion (optional)

Directions

  1. Cut potatoes and chicken into quarters and dice onions.
  2. Arrange potatoes (mixed with diced onions if you wish) in line along one side of a glass plan, arrange chicken in line down center of pan, and green beans along the last side.uncooked
  3. Sprinkle entire pan with Ranch Dressing Mix.
  4. Pour butter over potatoes, chicken, and green beans.
  5. Cover with aluminum foil and bake at 350 degrees for one hour.cooked

Peanut Butter and Bacon Cookies

We’ve combined the sweet and nutty goodness of peanut butter cookies with America’s favorite meat candy. Farmland Bacon Club presents… Peanut Butter & Bacon Cookies.

Prep Time: Ready in 15 minutes
Serves: About 2 Dozen

Ingredients

  • 1/3 cup margarine, softened
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 1/4 cup peanut butter (chunky or creamy)
  • 1 egg
  • 1 cup all purpose flour
  • 1 teaspoon baking soda
  • Dash of salt
  • 1 (2.1-oz.) pkg. Thick Slice Farmland® Fully Cooked Applewood Smoked THICK Cut Bacon chopped
  • 1 cup peanut butter chips
  • 1 cup Heath toffee bits
  • 1/2 teaspoon vanilla extract

 

Preparation

  • Heat oven to 350°F. In large bowl, cream together margarine, sugar and brown sugar using electric mixer.
  • Add peanut butter, eggs and vanilla; mix well. Add flour, baking soda and salt; mix until flour is well combined.
  • Stir in fully cooked bacon, peanut butter chips and toffee bits.
  • Spoon onto greased cookie sheet, approximately 2-inches apart. Bake at 350 & degF. for 12 to 16 minutes.

Spinach and Artichoke Dip

Ingredients:

  • 1 (10 ounce) box frozen, chopped spinach, thawed
  • 1 (14 ounce) can artichoke hearts, drained and rough chopped
  • 1 cup shredded Parmesan/Romano cheese blend
  • 1/2 cup shredded mozzarella cheese
  • 10 ounces prepared Alfredo sauce
  • 1 teaspoon minced garlic
  • 4 ounces (1/2 package) softened cream cheese

Directions:

  • Mix ingredients thoroughly in a bowl and spread mixture into a small baking dish.
  • Bake in an oven preheated to 350 degrees F for 30 minutes or until cheeses are bubbling and melted.

(Stays FRESH 1 Week)

Need a Fast, Easy, Economical Lunch Option for work (or even when you are busy at home)? Sunday night, make up some Salads in Mason Jars!

These will stay Fresh for a FULL WEEK as long as you make sure the Lettuce/Spinach DOES NOT TOUCH the Dressing you will be putting on the bottom of the Mason Jar!

Directions:

  • Stack your Ingredients in a Mason Jar that seals tight.
  • ALWAYS START with the Dressing on the Bottom (This is Very Important)
  • End your layering with the Lettuce/Spinach (Your Greens on the Top)
  • Before Eating, Shake Contents & Dump onto Plate, then ENJOY!
  • That is it! These stay Crisp and Fresh as the day you made them for a week!

The ones below are made with the following Ingredients:

  • Homemade Ranch
  • Spinach/Lettuce
  • Sunflower Seeds
  • Grape Tomatoes
  • Carrots
  • Frozen Peas (thawed)
  • Mushrooms
  • Bacon
  • Hard Boiled Egg
  • Radishes
  • Cubed Ham

Ingredients:

  • 1 can corn
  • 1 can cream corn
  • 1 box corn muffin mix
  • 2 eggs
  • 4 ounces shredded cheese

Directions:

  • Preheat oven 350
  • Butter casserole dish or spray with cooking spray
  • Mix all ingredients together
  • Pour batter into casserole dish
  • Bake for 50-60 minutes

Easy Crockpot Chicken and Dumplings (2.5 & 6 Hour Recipe)

Easy Crockpot Chicken and Dumplings Recipe

Ingredients:

  • 4- boneless skinless chicken breasts
  • 2- chicken flavor bouillon cubes
  • 2- 10.5 oz cans cream of chicken soup
  • 3/4 Cup of Milk
  • 1- small onion diced
  • 1- small bag frozen peas
  • 1- small bag frozen corn
  • 2- celery stalks
  • 2- full size carrots
  • 2- 10.2 oz refrigerator biscuit dough torn in quarter size pieces


6 hour recipe

  • In 4 qt crock pot add frozen chicken breasts, bouillon cubes, and cream of chicken soup.
  • Cook on high for 4 hours. Use tongs to break up chicken breasts inside crock pot.
  • Add onion, peas, corn, celery, carrots biscuit dough and 1/2 cup water.
  • Continue to cook on high for two more hours or until biscuit dough is cooked.
  • If the mixture gets to thick add water 2 TBSP at a time until desired texture is achieved.


2.5 hour recipe

  • Add chicken breasts to shallow pot.
  • Add enough water to just cover tops of chicken.
  • Boil until cooked. Pour chicken and water into 4 qt crock pot.
  • Shred chicken with tongs.
  • Add one cup water.
  • Add bouillon cubes, cream of chicken soup, onion, peas, corn, celery, carrots and biscuit dough.
  • Cook on high for 2 hours or until biscuit dough is fulled cooked.
  • If mixture gets too thick add water 2 TBSP at a time until desired thickness is achieved.

Dutch Baby Recipe (German Pancake)

Ingredients:

  • 3 tablespoons butter
  • 3 eggs
  • 3/4 cup flour
  • 3/4 cup of warmed milk-20-30 seconds in microwave
  • 1 tablespoon plus 1 teaspoon sugar
  • pinch of salt
  • 1 teaspoon of vanilla

Directions:

  • Preheat oven 400 Degrees
  • Place butter in oven safe pan and let melt
  • In a blender combine-eggs, flour, sugar, vanilla and pinch of salt combine on medium speed until light yellow
  • Carefully remove pan from oven, swirl butter all over pan, then add to blender and combine
  • Pour batter into pan and carefully place back into the oven
  • Cook for 20-25 minutes or until the pancake is puffed in the center and golden brown around edges.


Remove from pan carefully and dust with powdered sugar, Enjoy!
