Snow Ice Cream!

Turn the snow day into a fun ICE CREAM MAKING party! Yes, I said ICE CREAM!  Use some of the generous gift from Mother Nature to mix up a quick easy treat for your kids!

What you need:

  • 1 c. milk
  • 1/3 c. granulated sugar
  • 1 t. vanilla extract
  • 8 cups clean snow or shaved ice (more or less depending on the snow texture)

Make it:

In a REALLY large bowl mix milk, sugar, and vanilla together until combined. Run out and grab some CLEAN, FRESH snow and quickly stir it into the milk mixture until you reach your desired consistency.  Start with about 7 cups/scoops and add more as needed.  Work fast, this will start to melt quickly.

Top with sprinkles for a fun treat to beat the snowed in blahs!

Make sure your snow is fresh and fluffy.  Hard, old snow will not give you a nice smooth texture!

Brownie Batter Puppy Chow

Brownie Batter Puppy Chow

No matter whether you call it Puppy Chow or Muddy Buddies, you will call this a new favorite treat!  Instead of shaking the cereal in powdered sugar, use a brownie mix for an insanely delicious chocolate kick as good as licking out the brownie batter bowl!

Add seasonal sprinkles to the brownie mix and you can turn this into the perfect treat for any holiday!!

What you need:

  • 1 – 12 oz box Rice Chex
  • 1 – 12 oz bag chocolate chips
  • 1 c. creamy peanut butter
  • 4 Tbsp. butter
  • 1 – 17-20 oz. brownie mix (any brand or flavor)
  • large paper or plastic bag
  • Optional: Sprinkles or candies to match the Holiday Theme you want!

Make it:

  1. Put cereal into a large mixing bowl
  2. In a microwave safe bowl add chocolate chips, peanut butter, and butter.
  3. Microwave (if your microwave has a power setting, I highly recommend reducing the power to 7) for 3 minutes, stirring every 30 seconds until smooth and combined.  Be careful not to over heat and stir often! You can do this on the stove top as well!
  4. Pour melted chocolate mixture over cereal and carefully mix until well coated.
  5. Put cereal into the bag and top with dry brownie mix
  6. Get the bag tightly closed and give it a good shake.  Side to side & up and down.  Shake for about 1 minute making sure to constantly be turning the bag.  Check that it is well coated and separated into single pieces.  If not, keep shaking!
  7. Add sprinkles and candies of choice for a pop of color
  8. Cover and store in a sealed container once completely cool

As Easy as A, B, C – Vegetable Soup 3 Ingredient Dinner

If ONE meal stands out from my childhood THIS IS IT.  Something so simple and containing just 3 straight forward, common ingredients it comes together in a snap instantly taking me back to family dinner around the table!  The burgers steam in the soup and get a rich, juicy flavor like you cooked it all day.  Serve with mashed potatoes and you have a complete meal heavy on comfort but light on effort!

What you need:

  • 1 pound ground beef
  • 2 cans Campbell’s Vegetable Soup with ABC pasta (not the barley one; I use the Vegetarian one)
  • 1 cup shredded cheese
  • Salt & Pepper to taste

Make it:

  • Form ground beef into 3 or 4 patties (1/3 pound or 1/4 pound – however you prefer)
  • Salt & Pepper both sides
  • Preheat on medium heat a deep sided skillet
  • Sear both sides thoroughly, about 4-5 minutes each side, until deeply browned
  • Drain off most of the grease
  • Cover the top of each burger patty with the soup – straight out of the can
  • Add all the remaining soup to the skillet and about 1/2 can of water
  • Cover and reduce heat to low.   Cook, covered for about 20 minutes or until burger has reached desired done-ness.  Depending on the thickness; time will vary.  I cook mine to a medium well – just a tiny bit pink but hot all the way through.
  • Top with shredded cheese and cover for 3 more minutes or until cheese melts.
  • Serve with mashed potatoes and spoon extra soup from the pan on top.

Peanut Butter Oatmeal Chocolate Cookies

Peanut Butter Oatmeal Chocolate Cookies

I have a SERIOUS weakness for big, thick, hearty cookies.  Give me ALL THE oats and peanut butter! Throw in chocolate chips and you have one amazing cookie — the kind you want to have a BIG cup of cold milk with and are secretly eating 3 or 4 in one sitting!

These cookies deliver on all that goodness!  Give them a try and I promise they will become a regular treat in your home!

What you need:

1 c. real butter (2 sticks) – room temperature
1 c. sugar
1 c. brown sugar
2 eggs
1 T. vanilla extract
1 c. peanut butter
1 1/4 c. quick oats (you can use old fashioned oats; but I prefer the smaller texture of the quick cooking)
2 1/4 c. flour
1 t. salt
2 t. soda
2 c. chocolate chips (1 – 12 oz bag)

Make these:

Preheat oven to 350°

Cream butter, sugars, eggs, and vanilla until light and fluffy.  Mix in peanut butter.  Add flour, oats, salt & soda.  Stir just until combined.  Fold in chocolate chips.

Portion out into large scoops of dough about 2″ apart on an ungreased baking sheet.  Cook for 12 -15 minutes until slightly brown and just set in the middle.  Cookies will flatten and start to crackle when ready to pull from oven.

Allow to rest on cookie sheet for 5 minutes before putting on cooling rack.

Blueberry Cheesecake French Toast Casserole

Scrolling Facebook the other day I saw a video for a dish similar to this.  I read the recipe and wasn’t sure the ratios and ingredients seemed quite right.  So rather than making something I wasn’t sure would turn right, I combined a few recipes I have tried before and made this rich and hearty breakfast dish.  Sure to please kids and adults alike its perfect as breakfast as it’s own or a welcome addition to your next potluck or brunch!

What you need:

  • 8 oz (or small loaf) of french bread, cut into small cubes
  • 6 eggs
  • 3 c. milk
  • 1 T. vanilla extract
  • 1/2 c. granulated sugar
  • 8 oz. cream cheese (room temperature)
  • 1 T. lemon juice
  • 1/2 c. powdered sugar
  • 2 cups blueberries (fresh or frozen)

For optional topping after baked:

  • 1 c. blueberries
  • 1 c. + 2 T. water
  • 1/2 c. sugar
  • 1 T. lemon juice
  • 1 T.  corn starch

To make:

  1. Butter or spray a deep casserole or 8 x 8 baking dish.
  2. Beat cream cheese, powdered sugar and lemon juice until light and fluffy.
  3. Layer HALF the bread cubes in dish.
  4. Top with 2 c. blueberries.  Dollop the cream cheese mixture over the blueberries.  This is rustic – just scoop all over – it doesn’t matter.  More bread goes on top so neatness and exact ratios are not required!
  5. Top with remaining bread cubes.
  6. Beat eggs, milk, vanilla and granulated sugar until well combined.
  7. Pour egg mixture over the bread.
  8. Cover and refrigerate overnight.
  9. Preheat oven to 350°.  Bake for 45 minutes uncovered until golden brown and set.
  10. Remove from oven and allow to rest for 15 minutes.

Optional Topping:

  1. Bring to a boil 1 c. water, sugar and lemon juice.
  2. Mix corn starch with remaining 2 T. of water.  Stir to dissolve.  Add to boiling water mixture whisking constantly until thick.
  3. Stir in blueberries.  Using a potato masher or the back of the spoon crush the berries to make a thick sauce.

Low Carb Cheese Steaks – KETO Friendly!

Low Carb Cheese Steaks

Cheesesteaks are my weakness. Along with stuffed peppers. All the carby goodness. Bread-less meat and cheese just wasn’t cutting it & I’m desperately missing one of my Nonna’s stuffed peppers.

So here we are, the best of both worlds: Cheese-Steak Stuffed Peppers.

Ingredients:

  • 2 Bell Peppers
  • Meat of choice, thinly sliced (I used Italian beef, but anything works!)
  • 4 oz. Mushrooms
  • 1/2 Onion, sliced
  • 8 slices of Provolone cheese

Steps:

  1. Preheat oven to degrees F
  2. Boil a pot of salted water
  3. Cut bell peppers in half, remove the seeds
  4. Blanch peppers for 5-6 minutes
  5. Saute meat, mushrooms and onions until cooked through and caramelized
  6. Dry peppers and place in a baking dish

 

Place a slice of cheese into the bottom of each pepper, fill pepper with meat mixture and top with a second slice of cheese then Bake in oven for 25 minutes!

Paint Chip Christmas Tree Ornaments

Paint Chip Christmas Tree Ornament

Whether looking for a classroom project, a grandparent’s gift or just something to keep the kids busy these VERY SIMPLE Christmas Trees will be a hit.  After raiding your local home improvement store and using mostly things you have on hand, things will come together in a snap!  You could even have the kids make these up and use them as gift tag labels!

Be sure to ask your store before taking the chips! I got mine from Lowes, and they had no problem with me taking as many as I needed!

What you need:

  • Sectioned Paint Chips in GREENS
  • Brown Paint Chips or Construction Paper
  • Hole Punch
  • String or Ribbon
  • Elmer’s Glue
  • Stickers, Sequins, Buttons, glitter glue, metallic sharpies, etc to decorate
  • I grabbed a few other paint chips (pinks, blues, purples, reds, yellows, oranges) and used the hole puncher to make colored ‘ornaments’ to glue on.

To make:

  1. Angle cut the long sides of the green paint chips to make tree shape
  2. Punch a hole at the top and string your ribbon through
  3. Cut the brown chips or paper into strips for the tree trunk and glue onto the back with the color side facing out
  4. NOW onto the decor! Go to town with whatever you have.  Use glitter glue to draw tinsel, glue on ornaments, and add stickers.  These trees can be anything kids can imagine.  Metallic markers work great for drawing ‘strings’ for lights.

Since I was doing this as a classroom party project I used a sectioned Rubbermaid container and set up the craft for easy access to a small group during center time.

To be honest…I do not love pizza. I really don’t even like it. – at all – What I do love? PIZZA TOPPINGS! You know how kids usually leave the crust? Well that’s me. Except I leave the whole slice of pizza, minus the toppings.

Now… I know what you’re thinking. “Who the heck doesn’t love a good slice of pizza?” Let’s just settle this now & I’ll send myself to the corner.  Buying pizza and just eating the toppings, what a waste!

So… low and behold: my new best friend. PIZZA TOPPING PIZZAS!

Ingredients:

  • Portabella mushroom caps
  • Low carb marinara sauce
  • Mozzarella cheese (I use fresh and cut thick slices)
  • Pizza toppings of choice (for these I just did fresh tomato, but I use mini pepperonis, too)
  • Olive oil

Steps:

  1. Preheat oven to 400 degrees F
  2. Using a spoon, remove the ‘fins’ inside the mushroom caps
  3. Rub the mushroom caps in olive oil and place top down on a nonstick cookie sheet
  4. Fill mushroom caps with marinara and pizza toppings of choice
  5. Roast in oven for 20 minutes

Low Carb Pepper Nachos

Nachos. Is there anything better?  I love a good crispy, salty tortilla chip. Unfortunately with eating low carb, they are not in my wheelhouse.  So why not get creative? Peppers as chips it is!

Ingredients:

  • 1 lb. Ground Beef
  • Taco Seasoning
  • Bell Peppers, seeded & cut into quarters (or sweet peppers cut in half)
  • Cheese, shredded

Steps:

  1. Preheat oven to 400 degrees F
  2. Brown meat mixed with taco seasoning, until cooked through (I make my own seasoning using chili powder, cumin, minced onion, onion and garlic powder, salt and pepper)
  3. Place peppers in a baking dish and fill with browned meat, top with cheese
  4. Bake in oven for 25 minutes, until peppers are fork soft and cheese is melted
