Caramel Puff Corn Recipe

Caramel Puff Corn Recipe

Preheat Oven to 250 Degrees Fahrenheit

Ingredients:

  • Two 8-10 oz. bags hull-less popcorn corn puffs
  • 3 Cups brown sugar
  • 3/4 Cup light corn syrup
  • 3 sticks real butter (no substitutions)
  • 3/4 tsp. baking soda
  • 1 large roasting pan
    (I use disposable aluminum roasters, they are large enough and easy to mix in)

Directions:

  • Bring brown sugar, corn syrup, and butter to boil over medium-low heat in large pot stirring regularly.
  • Boil for 1 minute.
  • Remove from heat and add baking soda and stir vigorously (it will become foamy and expand)
  • Pour caramel over puffs and stir to coat.
  • Bake in a 250 degrees Fahrenheit oven for 1 hour stirring every 15-20 minutes.
  • Remove from oven and cool completely.
  • Stir regularly to keep the cooling pieces from sticking together.
  • Store in an air tight container.

IMPORTANT: This will not stay crisp if made in humid weather or if left uncovered for long periods.

Beef Pot Roast with a Kick!

Ingredients:

  • Chuck Roast 3-4 lbs
  • 1 stick of butter
  • 1 packet of Au Jus
  • 1 packet of ranch
  • 1 jar of pepperoncini juice & peppers (Depending on how many you like)

Directions:

  • Add all to Crock Pot and cook on high for 6 to 10 hours!
  • Enjoy by itself or on a Sub Roll and use the juice for dipping.

Soft and Thick Sugar Cookies
(Made from Cake Mix)

 Cookie Ingredients:
  •  18 oz box white cake mix with pudding in the mix (any brand or flavor works. chocolate, yellow, orange, strawberry, etc. If using a smaller box mix, add a few extra tablespoons of flour.)
  • 2/3 cup flour
  • 1 teaspoon vanilla or almond extract to your taste
  • 2 large eggs
  • 1/3 cup canola oil
  • 2 Tablespoon sour cream (regular or reduced fat)
 Directions:
  • Preheat oven to 350 degrees. In a large mixing bowl, stir together cake mix and flour.
  • Add vanilla, eggs, oil and sour cream and mix on medium speed until incorporated. Batter will be fairly stiff.
  • Use a cookie scoop or roll into approximately one inch balls and bake on a baking sheet lined with a Silpat or parchment paper. This will help keep the bottoms of the cookies from browning.
  • Using your hand, gently flatten the cookies to about 1/2″ thick. You don’t want the bottoms to be browned or you’ve over baked these.
  • Bake approximately 8 minutes until just set.
  • Let cool about one minute on the pan and then transfer to wire racks to cool completely. 
Frosting Ingredients:
  • 1-2 Tablespoons milk or cream
  • 1 teaspoon vanilla or 1/4 t. almond extract to your taste
  • 2-3 cups powdered sugar Food coloring or sprinkles as desired
Directions:
  • Mix powder sugar, flavoring, and powdered sugar until smooth and spreadable adding more milk or sugar as needed.
  • Frost cooled cookies and decorate as desired.
  • Store cookies in an airtight container.

Crock Pot Orange Chicken

Ingredients

  • 4-5 Boneless, skinless chicken breasts (may be frozen)
  • 3/4 Cup orange marmalade
  • 3/4 Cup BBQ sauce
  • 2 Tablespoons soy sauce

Directions

  1. Cook chicken 3 hours in crock pot on high
  2. Drain juices
  3. Mix marmalade, BBQsauce, & soy sauce
  4. Pour over chicken, cook for 30 more minutes
  5. Serve over rice

Crock Pot Honey Sesame Chicken

Ingredients

  • 2 lbs of chicken breast
  • 3/4 cup honey
  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 1/2 cup chopped onion
  • 2 tablespoons EVOO
  • 2 garlic cloves minced
  • 1/4 teaspoon red pepper flakes
  • 4 teaspoons cornstarch dissolved in 6 tablespoon water
  • sesame seeds to garnish
  • scallions to garnish

Directions

  1. Place chicken in crock pot
  2. Combine honey, soy sauce, onion, ketchup, EVOO, and pepper flakes
  3. Pour mixture over chicken
  4. Cook on low for 4 hours
  5. Remove chicken, leaving sauce in crock pot
  6. Thicken sauce with cornstarch & water mixture
  7. Turn crock pot on high
  8. Shred chicken and place back in crock pot to coat with sauce
  9. Serve over rice and garnish with sesame seeds & scallions

Love Bugs (Edible)

Ingredients:

  • 36 Mini Pretzels
  • Red Candy Melting Chips
  • 36 Brown M&Ms or chocolate chips
  • 150 Black candy Pearls or mini chocolate chips

Directions:

  • Lay pretzels out on wax paper lined cookie sheet.
  • Heat Red Candy Melts by microwaving for 30 seconds stirring and repeating until melted. Allow to cool for 2-3 minutes.
  • Transfer chocolate to corner of zippered bag and clip tiny piece off of corner to pipe.
  • Pipe candy over inside of pretzel to fill completely. Smooth with finger if necessary.
  • Place a M&M for head on rounded end of pretzel. Place 4-5 pearls for spots.
  • Place cookie sheet in refrigerator for 20 minutes to allow candy to set.

Supplies For Bags:

  • 6 ziplock bags or favor bags
  • 6 – 5″ x 5″ appx. squares of craft paper, construction paper or scrap book paper
  • Stamps, glitter letters, stencils, stickers, or other decorations as desired

Directions:

  • Fold each piece of paper in half and decorate with LOVE BUGS using stamps, glitter letters, script or stencils. Add decorations as desired.
  • Place six pretzels in each bag. (If not using ziplocks, fold over & seal with tape or staple)
  • Cover top with decorated paper and staple to hold in place.

An Amazing YUMMY Recipe from “The One Pot Chef” for No Bake Nutella Cheese Cake. Below I have tried my best to convert the ingredients to our measurements in the U.S. You can watch his video with directions on how to make it. IT IS SO SIMPLE!

Coupon for Savings:

  • $2/1 Nutella® hazelnut spread (26.5oz jar)

Ingredients:

  • 1 Four ounce Stick of Butter
  • 9 Ounces Graham Crackers (About 2 Packs)
  • 2 Eight Ounce Packages of Cream Cheese
  • 1/3 of a Cup of Confectioners sugar
  • 13 Ounce Jar of Nutella
  • (Crust: Butter from above and 1 tbsp. of Nutella out of jar)

Easy Crock Pot Mac & Cheese Recipe

Ingredients:

  • 12 ounce no cook elbow macaroni
  • 3 & 3/4 cups milk
  • 12 ounces evaporated milk
  • 4 cups shredded cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 4 ounces cream cheese
  • 1/2 tsp. ground mustard (optional)
  • 1/2 tsp. salt (optional)
  • 1/4 tsp. pepper (optional)

Directions:

  • Add all ingredients to the crock pot and gently stir
  • Set crock pot to high and cook for 2 hours (I stirred every 30 minutes)
  • Feeds approximately 4-6

Additional Notes:

  • Cooking time will vary by crockpot. Two hours was perfect for mine, check noodles after 2 hours and if need be, cook a little longer.
  • This is a “homemade” dryer Mac & Cheese. If you want it super creamy, you can add a full brick of cream cheese and an additional cup of milk.
  • Try some “Extras” Ham? Bacon? Toss some Frenchs Crispy Onions on top to give it some added taste and texture.

Healthy Oatmeal Snack Bars

This is a great snack for those days when you are craving something sweet that does not included added sugar!

Ingredients

  • 3 Ripe mashed bananas
  • 1/3 Cup applesauce
  • 2 Cups oats
  • 1/4 Cup almond milk
  • 1/2 Cup raisins
  • 1 tsp Vanilla
  • 1 tsp Cinnamon

Mix all ingredients and spread into a pan.  Bake at 350 degrees for 15-20 minutes

Slow Cooker Chili

Ingredients

  • 2 pounds ground beef, turkey, or pork (browned, drained, and rinsed)
  • Large can of diced tomatoes
  • Medium can of tomato sauce
  • 2 Packets of chili seasoning
  • 2 Cans of kidney beans (optional)

Directions

  1. Combine all ingredients in slow cooker
  2. Cook on low 8-10 hours

I served this mixed with noodles, shredded cheese and sour cream!  Even the kids who normally hate chili devoured this and asked for seconds!  Left overs freeze great and make for an easy meal at a later date!
