Hobo Hamburger Stew

Hobo Hamburger Stew

This easy hearty soup is a hint spicy, but a little sweet. It comes together in a few minutes and you can mix and match veggies to what you prefer or have on hand.

Ingredients

• 1 tablespoon of oil
• 1 cup chopped onion
• 1/2 cup celery
• 1 tablespoon minced garlic
• 1 pound ground beef
• 2 tablespoons of all purpose flour
• 1 46-48 oz bottle of original or spicy V-8 juice
• 2 cups of diced carrots (about 2 large)
• 2 cups of corn
• 2 cups of cut green beans
• 3 tablespoons sugar
• 10 dashes of hot sauce (I always use Frank’s & doesn’t make it spicy, just
rounds the flavor out)
• 1 teaspoon of kosher salt, or to taste
• black pepper, to taste
• 2 c. small cut pasta – cooked just until tender

Instructions

In the bottom of a Dutch oven or other heavy pot, heat the oil over medium high heat. Add the onions and celery; cook and stir until softened, about 4 minutes. Add the garlic and ground beef, cook and stir until meat is browned and cooked through. Drain off excess fat. Sprinkle meat with flour; cook and stir for 3 minutes. Add the V-8 juice. Stir in the carrots, corn and green beans. Add hot sauce, sugar and seasonings to taste. Stir, cover and simmer over medium to medium low (low bubble) for about 30 minutes or until veggies are tender, stirring occasionally. Taste and adjust seasonings as needed.  Feel free to add more sugar or hot sauce depending on your preferences!  Just before serving, add cooked pasta.

You can add diced potatoes, but I prefer to add the pasta. Toss in whatever veggies you have on hand. I have used diced tomatoes, peas, and even canned or frozen veggies to get it done quickly! You can skip the flour part, too if you want a runnier soup. The flour makes it rich & thick.

Idea: Serve with Homemade Beer Bread or Soft Pretzels!

Easy Easter Carrot Snack Bags

What you Need:

  • Goldfish Crackers or Cheese Balls
  • Cone Shaped Favor Bags
  • Twist Ties, Ribbon or similar to tie shut

If you are looking for a fun yet fast Craft/Treat project for you and your little one to do, this is it!

My son’s attention span does not last long on projects, so this was perfect for his age. I ordered THESE snack bags that came with a variety of colored twist ties, and worked perfect! Of course you could also use ribbon, a pipe cleaner, or whatever you like. We filled our favor bags with some Goldfish Crackers we had recently purchased, but you could also use Cheese Balls if you have them and either will give you the same fun carrot look!

If you want to avoid the orange cheesy fingers, I would suggest going the Goldfish route. Candy Corn would also be an option, but seeing as my son will be taking these as a treat to his classmates, I am pretty sure his teacher would not appreciate a classroom full of sugar enhanced preschoolers.

Chocolate Lasagna

Chocolate Lasagna

What you need:

  • 1 package of Oreos (appx. 16 oz)
  • 4 T. butter (melted)
  • 2 boxes Chocolate Instant Pudding
  • 2 – 8 oz. Cool Whip – thawed
  • 1 – 8 oz. Cream Cheese (room temperature)
  • 1/4 c. Powdered Sugar
  • 3 c. milk
  • 1/4 c. mini chocolate chips

Directions:

  1. Crush Oreos into fine crumbs using blender or food processor
  2. Reserve 1/4 c. of the Oreo crumbs for garnish
  3. Mix remaining Oreos and Butter and press firmly into a 9 x 13 pan
  4. Beat Cream Cheese and Powdered Sugar in a bowl until light and fluffy
  5. Fold in 1 carton of Cool Whip into Cream Cheese mixture
  6. Spread evenly over Oreo crust
  7. Sprinkle Chocolate Chips over Cream Cheese Layer
  8. Wisk Milk and Pudding Mix together until combined and starting to thicken
  9. Carefully add Pudding to pan.
  10. Allow to chill for 30 minutes in refrigerator
  11. Top with Cool Whip and sprinkle reserved Oreo Crumbs for garnish
  12. Refrigerate 4 hours before serving

Cinnamon Roll Chex Mix

Cinnamon Roll Chex Mix

Preheat Oven to 250° F

Ingredients:

  • 2 – 12 oz. Boxes Rice Chex Cereal
  • 3 cups brown sugar
  • 3/4 cup light corn syrup
  • 3 sticks real butter (no substitutions)
  • 1 Tbsp. cinnamon
  • 1/4 tsp. ground nutmeg
  • 3/4 tsp. baking soda
  • 1 Tbsp. vanilla
  • 2 c. mixed nuts (optional)
  • 2 c. white chocolate
  • 2 large roasting pans
    (I use disposable aluminum roasters, they are large enough and easy to mix in)

Directions:

  • Pour cereal & nuts into roasting pans
  • Bring brown sugar, corn syrup, butter, cinnamon, and nutmeg to boil over medium-low heat in large pot stirring regularly.
  • Boil for 1 minute.
  • Remove from heat and add baking soda and vanilla; stir vigorously (it will become foamy and expand)
  • Pour caramel over cereal and stir to coat.
  • Bake in a 250° F oven for 1 hour stirring every 15-20 minutes.
  • Remove from oven and cool completely.
  • Stir regularly to keep the cooling pieces from sticking together.
  • Melt and white chocolate over a double boiler or carefully in the microwave*
  • Drizzle melted chocolate over the cooled cereal.
  • Allow to set and break into pieces.
  • Store in an air tight container.

IMPORTANT: This will not stay crisp if made in humid weather or if left uncovered for long periods.

*TIP: If your white chocolate seizes or isn’t smooth add a teaspoon of coconut oil to loosen it up and make it spreadable

Monster Munch Snack Mix

Personalize this snack mix however your family likes.  Mix and match any cereal, crackers, or candies you can imagine!

What you need:

  • 5 c. Chex Cereal
  • 5 c. Cheerios
  • 3 c. Mini Pretzels
  • 3 c. Gold Fish Crackers
  • 2 c. Peanuts, Cashews or mixed Nuts*
  • 1/2 c. Creamy Peanut Butter*
  • 3/4 c. Butter (real butter, no substitutions)
  • 1 1/2 c. Light Brown Sugar
  • 2/3 c. Light Corn Syrup
  • 2 t. Vanilla
  • 1 t. Baking Soda

Additional Add ins of your choice: Reese’s Pieces, M&Ms, Candy Corn, etc.

How to Make it:

  • Mix Cereal, Crackers & Nuts in a large roasting pan
  • Bring peanut butter, brown sugar, corn syrup, and butter to boil over medium-low heat in large pot stirring regularly.
  • Boil for 1 minute.
  • Remove from heat and add vanilla & baking soda and stir vigorously (it will become foamy and expand)
  • Pour caramel over cereal, crackers and nuts and stir to coat.
  • Bake in a 250 degrees Fahrenheit oven for 1 hour stirring every 15-20 minutes.
  • Remove from oven and cool completely.
  • Stir regularly to keep the cooling pieces from sticking together.
  • Once cool, toss in candies as desired.
  • Store in an air tight container.

My Copycat Starbucks Frappuccino

No need to spend big bucks at the gourmet coffee shop to get yourself a blended coffee beverage! Make it at home with a few simple ingredients in just a few minutes.  You will love how easy and tasty it is!

What you need:

  •  Approximately 2 c. Ice
  • 1 c. Milk
  • 3 T. C0appuccino Mix or (1) Individual Serving Latte’ or Cappuccino Mix (any flavor or brand)*
  • Whipped Cream, Caramel or Chocolate Sauce, or Sprinkles for garnish as desired

 

 

 

 

 

How to make it:

  1. Place the first 3 in a single serving blender cup
  2. Pulse 4-5 times until blended smooth and ice is crushed fine
  3. Garnish as desired

*If you prefer a sweeter drink, add more cappuccino mix or a splash of flavored syrup.

Using a store bought mix you have a simple & easy breakfast that comes together in minutes or make ahead & pull a few out for quick meals on the go!      You can pin this for later HERE

What you need:

  • Pancake Mix & ingredients required to prepare
  • Add in toppings (blueberries, mini chocolate chips, cooked sausage, etc.)
  • Syrup for dipping
  • Mini Muffin Tin

 

Make Them:

  1. Preheat oven to 400°
  2. Prepare Pancake mix according the package directions.
  3. Thoroughly coat the muffin tin with nonstick spray.
  4. Pour pancake batter into prepared tin, filling each 2/3 full.
  5. Top with desired add ins.

  6. Bake for 10-12 minutes until lightly browned and set.
  7. Allow to rest in pan for a few minutes and remove.

CRAB RANGOON DIP

This dip tastes just like Chinese takeout Rangoon without the hassle of wrapping each individual Rangoon! Serve it with tortillas, pretzel chips, bagel chips, or as this recipe shows, crispy wonton strips.

Ingredients:

  • 2 – 8 oz. packages of light (Neufchatel) cream cheese, room temperature (regular is fine, light melts better)
  • 1/4 c. sugar*
  • 1 c. finely chopped imitation crab meat
  • Handful of green onion, chopped (optional)
  • 1 t. garlic powder
  • 2 T. soy sauce
  • 2 T. milk
  • 1 package wonton or egg roll wrappers

Directions:

Mix together and put in crock pot and warm on low for about 2 hours, stirring once or twice.

For the crisps, cut wrappers into 1″ strips and deep fry, just until lightly brown & crisp.  The strips can also be baked at 350º on a cookie sheet for 3-5 minutes just until browned.

Serve warm with crisps on the side. *you can adjust the sweetness to your own tastes adding more or less.

Healthy Baby Snack Puffs Recipe

This quick recipe makes good use those half empty jars of rice cereal most parents with little ones have sitting around.  Babies, toddlers, & even older kids will devour them. Plus, by adding veggie purees they are a great way to sneak in some hidden nutrients.

What you’ll need:

  • 1 cup rice cereal (any brand or flavor)
  • 1 cup flour (white or whole wheat)
  • 2-4oz. baby food purees* OR 1 cup apple sauce
  • 2 teaspoons cinnamon (optional)
  • 2 tablespoons canola oil
  • 3 tablespoons water

 

 

 

How to do it:

  • Mix all of the above together into a thick batter. If dough does not completely combine, add a few more drops of water.

  • Line a cookie sheet with parchment or foil and lightly spray with non-stick oil.
  • Using a pastry bag (or ziplock with corner cut off) pipe into stars, long teething sticks or simply spoon onto a cookie sheet and slightly flatten for cookies.

  • Bake at 425 for 10-15 minutes until browned and firm. A bit longer for a crunchier style snack.
  • Cool, and let the kiddos enjoy.
  • Store in an air tight contain for 2-3 days or freeze for up to 1 month.
  • These are slightly chewy and a bit more firm than the store bought puffs so watch those babes carefully when trying new foods!!

*use any baby food purees you have. Sweet potatoes, carrots, squash taste great and the kids never know there are veggies! I usually do one veggie and one fruit or the fruit/veggie blend purees.IMG_1488

Cheesy Tuna Casserole

Take some help from a jarred sauce to make this classic home style casserole.

 

What you need:

  • 3 c. Uncooked Pasta (any short cut style)
  • 1 – 16 oz. Jar Ragu Double Cheddar (or similar) Sauce
  • 8 oz. Cheese Cubed or Shredded (cheddar, co-jack, pepper jack, etc.)
  • 2 Cans Tuna (drained)
  • ½ c. Milk
  • Black Pepper to Taste
  • 1 c. Crushed Crackers, Potato Chips, or Bread Crumbs (optional)
  • Grated Parmesan Cheese

 

Directions:

  1. Bring a pot of salted water to a boil. Stir in pasta and cook according to directions, under cooking by one minute. Drain and rinse pasta.
  2. Warm the cheese sauce and milk over low heat while the pasta cooks. (Tip: Add the milk to the emptied sauce jar and, with the lid on, give it a good shake to easily get all the sauce out.)

  3. Fold cheese chunks/shreds, tuna* and pepper into sauce mixture.

  4. Toss pasta and sauce mixture together until blended.  Pour into a greased casserole dish
  5. Top with Parmesan cheese and crumb topping if desired.

  6. Bake at 350° for 25 minutes until golden brown and bubbling.

*substitute cooked sausage, bacon or ham pieces to your taste. Also, peas are a wonderful addition to this dish.
