Poppyseed Chicken Pasta Salad

Poppyseed Chicken Pasta Salad
(I will put the traditional Recipe below…but I do mine different)

You could use this Coupon for dressing:
$0.75 off any 1 Newman’s Own Salad Dressing

Ingredients:

  • 2 Cups COOKED Cubed Chicken Breast Strips
  • 1 Cup Total of Red & Yellow Peppers (Cleaned, Seeded and Chopped)
  • 2 Cup Fresh Grapes (I use Seedless Green & Red. PLUS add Extra)
  • 1 Box Cooked and Rinsed Pasta – I use Rotoni (Spirals) or Farfalle (Small Bowtie)
  • 1 – 2 Cups Poppy Seed Dressing – I will post recipe below, you can also use store bought.

Directions:

  • Boil your noodles and rinse in cold water. DRAIN WELL.
  • Mix all ingredients above and gently stir.
  • Chill before serving.

Poppy Seed Dressing

  • 1 1/2 cups mayonnaise or salad dressing
  • 2/3 cup sugar
  • 4 tablespoons cider vinegar
  • 4 teaspoons poppy seed

Directions:

  • In small bowl mix all ingredients and wire whisk.

Betty Crockers Chicken Pasta Salad

Ingredients:

  • 1 box Betty Crocker® Suddenly Salad® classic pasta salad mix
  • 1/2 cup refrigerated poppy seed dressing
  • 1 1/2 cups cut-up cooked chicken
  • 3/4 cup halved red grapes
  • 1/2 cup thinly sliced celery
  • 1/4 cup slivered almonds, toasted

Directions:

  • Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally.
  • Drain pasta; rinse with cold water. Shake to drain well.
  • In large bowl, stir together seasoning mix and dressing. Add pasta and remaining ingredients; toss to combine. Serve immediately, or refrigerate.

Simple Crock Pot Spaghetti

Ingredients:

  • Two 14.5 ounce cans Diced Tomatoes
  • Two 24 ounce jars of Red Pasta Sauce
  • 1# Bag of Frozen Meatballs
  • One 16 ounce Box of Spaghetti Noodles

Directions:

  • Add all ingredients to crock-pot.
  • Season to taste (optional).
  • Stir.
  • Cook on high for 4 hours.

Confessions Of A Lazy Parent

Raising kids is tiring work!  I am sure we have all had those moments where we just throw in the towel and take the somewhat unorthodox, yet so much simpler route to do something!  So let’s hear it…what are YOUR lazy parent confessions?  Here is a list of a few of ours to get you started, and help you realize that no, you are not alone!  Just head over to our Facebook page and comment with YOUR confessions!

  • My first thought when my daughter got her license was, “YES, now she can go to the store for me!”
  • I have (on more than one occasion) purchased new socks and underwear because there weren’t any clean ones!
  • Used plastic forks and paper plates when there were no clean dishes
  • Eat outside or in living room because the dining room table isn’t cleaned off
  • Served cereal for dinner!!!
  • Only read every few pages; skipping to the end of the bedtime story when I’m too exhausted to deal anymore!
  • Throwing away Tupperware when its been in the fridge too long and I don’t dare open it!
  • I also vacuum all our hardwood floors, much easier than sweeping & picking up the dirt.
  • Microwaving a hot dog for lunch because getting bread, peanut butter, & jelly requires too much effort!
  • I have 5 laundry baskets of clean laundry. Every morning I dig through them to dress my kids.  Who has time to put laundry away?!
  • I only clean the toy room when we have company over (and that depends on who the company is). It looks like a tornado has gone through. I used to pick up every day, then it became a couple times a week to once a week. Now, it’s just when we know someone is coming over.
  • I reuse the same pan every day for breakfast.  Who wants to wash pots and pans on a daily basis?!
  • I throw dishes away that are baked on or left in the fridge.
  • I leave things in the fridge to go bad instead of clearing it out and washing those dishes right away!
  • I clean my daughter’s favorite cup by adding dish soap, hot water and replace cap and shake it clean.
  • I stuff dishes in the oven instead if washing them when company was coming over.
  • Sometimes I hide in the bathroom and actually lock the door when Daddy’s home so I don’t have to change another poopy diaper!
  • I’m also guilty of sleeping in & wearing the same clothes. My comfy clothes double as my pj’s and on the days I don’t leave the house, I don’t change my clothes!
  • I text my kids in the other room instead of getting up and walking over to talk to them.
  • I don’t want to start my 7 month old of solid foods cause then I’ll have to start actually feeding her instead of just breastfeeding. It’s just so much easier.
  • My toddler has been potty trained during the day for over 8 months (turns 3 next month) but I still put a pull up on her at night because I don’t want to clean up a mess if she has an accident.
  • Washing the dishes is one of my least favorite chores so I often store leftovers in ziploc bags so I can just toss them & have less dishes to wash as we use them.
  • I have my son dress in what he is going to wear the next day before he goes to bed so we can sleep in longer and not have to get dressed in the morning.
  • I have wrapped presents by leaving them in store bags and just put a bow on the bag.
  • The clothes in my dresser are far from being folded… My kids dressers and neatly organized because I pay my 11 year old to keep the dressers tidy.
  • I hide from my kids in the bathroom so I can read.
  • I hide toys that make too much noise and internationally by Dollar Tree batteries so they will die quickly.
  • I look for shoes with velcro so I don’t have to tie them.
  • I play hide and seek with my son and may delay in seeking to get 5 minutes of quiet….He also may have fallen asleep waiting on me.
  • I have slept in my son’s bed just so I don’t have to remake mine.
  • I use towels directly out of the dryer.
  • I buy my kids microwavable pancakes and French toast sticks so I don’t have to make them breakfast.
  • I have brought the Pillsbury brownies from the bakery at Sam’s club and put them on a plate to make it look like I baked them.
  • I yell my kids names in the house to make sure they are in the house instead of looking.
  • I sleep on top of my comforter in the summer, so I don’t have to make the bed.
  • I rarely iron clothes. The dryer and a wet towel do it for me.
  • My husband puts a lock on our TV within a certain time frame. It doesn’t unlock until 730 am. I told my kids the pass code so I can sleep in on Saturdays & Sundays.
  • If my daughters hair is super snarly I wrap it in a bun . too much time and effort to brush.
  • I will call one of the kids down from wherever they are to let the dog out because I just do not want to do it.
  • I didn’t have any water, so I licked the babies pacifier clean.
  • I set the clocks back an hour so I could put the kids to bed early!
  • I tossed a towel down over the spot my baby peed on the sheets while being changed and went back to sleep.

Cauliflower Pizza Crust Recipe

Cauliflower Pizza Crust Recipe

  • Healthy
  • Low Carb
  • DELICIOUS! Give it a try…

Supplies Needed:

  • Food processor
  • Cheese cloth
  • Parchment Paper

Ingredients:

  • 3 cups florets only of cauliflower
  • 1/4 cup Parmesan cheese (I used Kraft bottle)
  • 1/4 cup shredded mozzarella cheese
  • 1 whole egg
  • 1/4 tsp garlic powder
  • 1/4 tsp salt

Directions:

  • Preheat oven to 450 Degrees Fahrenheit
  • Wash and Air Dry Cauliflower Florets (ONLY USE Florets) in a strainer. Mine took about 40 minutes.

  • Place the flourets in the food processor and turn it on for about 1 minute or until all the florets look like bread crumbs. Mine took about 1 and a half minutes. (Should look like Panko Crumbs)

  • Place the cauliflower on the cheese cloth and squeeze the water out!  This is very important. You don’t want your cauliflower crust to be wet or it won’t be crispy like a pizza crust.

  • After squeezing, transfer into a working bowl and mix the salt, garlic powder, Parmesan cheese and mozzarella cheese together. Then drop the egg into the mixture.
  • MIX WELL!!
  • Use parchment paper. Form your pizza crust to a circular shape or square shape, which ever you prefer.

  • Put the crust in the oven for 10 minutes or until it has a bit of a golden brown appearance. Remove from oven and  start building your toppings! Put your pizza back into the oven for another 10 minutes or until the cheese melts. I like mine a little crispy, so I baked my pizza for 13 minutes.

TIPS:

You can fail at this recipe if you don’t squeeze your cauliflower!

IF you prefer, You can use 2 egg whites instead of one whole egg!

Easter Bunny Peep Racers

How ADORABLE are these! And now that we have Twinkies back… Perfect for Easter Treats. I am going to make these this weekend. I found this on Key Ingredients Website, and once I construct them, I will add my pictures to this blog post for you all to see how they turn out. So clever!

Ingredients:   

  • Large marshmallows, cut in half crosswise
  • Easter Bunny Peeps
  • Round mini pretzels
  • Cream-filled snack cakes (like Twinkies, or Little Debbie Cloud Cakes)
  • White frosting or decorator icing
  • M&M’s candies

Directions:

  • Cut a small rectangle out of the top of the round side of the snack cake – starting about a third of the way from the front end of “car”.
  • Use frosting to adhere the bunny peep, mini pretzel “steering wheel” and halved marshmallow “tires” in place.
  • Decorate the center of the “tires” with M&M’s, using a dab of frosting to adhere.
  • Allow time for frosting to set up.

Caramel Puff Corn Recipe

Preheat Oven to 250 Degrees Fahrenheit

Ingredients:

  • Two 8-10 oz. bags hull-less popcorn corn puffs
  • 3 Cups brown sugar
  • 3/4 Cup light corn syrup
  • 3 sticks real butter (no substitutions)
  • 3/4 tsp. baking soda
  • 1 large roasting pan
    (I use disposable aluminum roasters, they are large enough and easy to mix in)

Directions:

  • Bring brown sugar, corn syrup, and butter to boil over medium-low heat in large pot stirring regularly.
  • Boil for 1 minute.
  • Remove from heat and add baking soda and stir vigorously (it will become foamy and expand)
  • Pour caramel over puffs and stir to coat.
  • Bake in a 250 degrees Fahrenheit oven for 1 hour stirring every 15-20 minutes.
  • Remove from oven and cool completely.
  • Stir regularly to keep the cooling pieces from sticking together.
  • Store in an air tight container.

IMPORTANT: This will not stay crisp if made in humid weather or if left uncovered for long periods.

Indoor Excavating Play Zone

Help your little one Dig out from Cabin Fever and start “Diggin” the Indoors with this simple home made Sand Box!

Supplies Needed:

  • Lower Rimmed Storage Container (Cover if you have a cat)
  • Trucks
  • Play Sand
  • Rocks or Hidden Gems to Find

Directions:

  • Fill Storage Container with desired amount of Sand
  • Pour in Play Sand
  • Put rocks on top of sand and bury a few, build some mounds, use your imagination
  • Add Trucks

Beef Pot Roast with a Kick!

Ingredients:

  • Chuck Roast 3-4 lbs
  • 1 stick of butter
  • 1 packet of Au Jus
  • 1 packet of ranch
  • 1 jar of pepperoncini juice & peppers (Depending on how many you like)

Directions:

  • Add all to Crock Pot and cook on high for 6 to 10 hours!
  • Enjoy by itself or on a Sub Roll and use the juice for dipping.
