Crab Rangoon Dip Recipe

CRAB RANGOON DIP

This dip tastes just like Chinese takeout Rangoon without the hassle of wrapping each individual Rangoon! Serve it with tortillas, pretzel chips, bagel chips, or as this recipe shows, crispy wonton strips.

Ingredients:

  • 2 – 8 oz. packages of light (Neufchatel) cream cheese, room temperature (regular is fine, light melts better)
  • 1/4 c. sugar*
  • 1 c. finely chopped imitation crab meat
  • Handful of green onion, chopped (optional)
  • 1 t. garlic powder
  • 2 T. soy sauce
  • 2 T. milk
  • 1 package wonton or egg roll wrappers

Directions:

Mix together and put in crock pot and warm on low for about 2 hours, stirring once or twice.

For the crisps, cut wrappers into 1″ strips and deep fry, just until lightly brown & crisp.  The strips can also be baked at 350º on a cookie sheet for 3-5 minutes just until browned.

Serve warm with crisps on the side. *you can adjust the sweetness to your own tastes adding more or less.

Trust me when i say that this was the quickest, easiest, simplest way to cut, clean up and put away the “leftovers” of a watermelon! I didn’t have a juice pool all over my counter, or have to intricately cut the rind “smiles” off the watermelon. CHECK THIS OUT!

What You’ll Need:

  • a whole watermelon
  • a sharp knife
  • cutting board
  • a medium to large bowl

Steps:

Before you start, ALWAYS wash your Watermelon! Then… to be safe, WASH IT AGAIN! The rind of melons carry bacteria like E.coli, listeria, and salmonella.

Cut your watermelon in half. “Hamburger style”

Set one half aside for a bit and turn the other half flesh side down on-to the cutting board

Trim off the rind starting from the top

Once you have cut all the rind off the melon, cut into slices “hamburger” and “hotdog” style

Place your bowl over your melon after you have finished slicing

With the help of your cutting board, turn over the bowl of melon and VOILA! Easy to serve, already to-go sliced watermelon!

Ingredients:

  • 12 ounce no cook elbow macaroni
  • 3 & 3/4 cups milk
  • 12 ounces evaporated milk
  • 4 cups shredded cheddar cheese
  • 4 oz. of Cream Cheese
  • 1/4 cup grated parmesan cheese
  • 1/2 tsp. ground mustard (optional)
  • 1/2 tsp. salt (optional)
  • 1/4 tsp. pepper (optional)

Directions:

  • Add all ingredients to the crock pot and gently stir
  • Set crock pot to high and cook for 2 hours (I stirred every 30 minutes)
  • Feeds approximately 4-6

Additional Notes:

  • Cooking time will vary by crockpot. Two hours was perfect for mine, check noodles after 2 hours and if need be, cook a little longer.
  • This is a “homemade” dryer Mac & Cheese. If you want it super creamy, you can add a full brick of cream cheese and an additional cup of milk.
  • Try some “Extras” Ham? Bacon? Toss some Frenchs Crispy Onions on top to give it some added taste and texture.

Healthy Baby Snack Puffs Recipe

This quick recipe makes good use those half empty jars of rice cereal most parents with little ones have sitting around.  Babies, toddlers, & even older kids will devour them. Plus, by adding veggie purees they are a great way to sneak in some hidden nutrients.

What you’ll need:

  • 1 cup rice cereal (any brand or flavor)
  • 1 cup flour (white or whole wheat)
  • 2-4oz. baby food purees* OR 1 cup apple sauce
  • 2 teaspoons cinnamon (optional)
  • 2 tablespoons canola oil
  • 3 tablespoons water

 

 

 

How to do it:

  • Mix all of the above together into a thick batter. If dough does not completely combine, add a few more drops of water.

  • Line a cookie sheet with parchment or foil and lightly spray with non-stick oil.
  • Using a pastry bag (or ziplock with corner cut off) pipe into stars, long teething sticks or simply spoon onto a cookie sheet and slightly flatten for cookies.

  • Bake at 425 for 10-15 minutes until browned and firm. A bit longer for a crunchier style snack.
  • Cool, and let the kiddos enjoy.
  • Store in an air tight contain for 2-3 days or freeze for up to 1 month.
  • These are slightly chewy and a bit more firm than the store bought puffs so watch those babes carefully when trying new foods!!

*use any baby food purees you have. Sweet potatoes, carrots, squash taste great and the kids never know there are veggies! I usually do one veggie and one fruit or the fruit/veggie blend purees.IMG_1488

Simple Hack to KITTY PROOF your cords!

Do you have a cat that likes to chew cords? Or in my case TWO CATS that like to chew cords? My home’s “IT WASN’T ME!” list so far this year consists of cell phone cords (x3), a video game console cord, and an essential oil diffuser cord (the unit was a whole TWO DAYS OLD)

WELL GOOD NEWS, no more yelling “KITTY WHAT DID YOU DO!” as your cat FLIES up the stairs because you are using “THAT VOICE” while you hold a teeth marked, wire exposed cord in your hand wondering “HOW THE HECK did they not shock their little furry butt?” as it was still plugged into the electrical outlet.

All you need is some Automotive Wire Covering, it works like a charm and even better, IT IS CHEAP! You can pick it up for less than $1 a foot HERE on Amazon.  I got twenty feet for about $7 (that covers a couple of phone charger cords) and is MUCH cheaper than purchasing NEW ONES all the time, ESPECIALLY if you have a cat that PREFERS the white RAPID CHARGER cord (TWICE) over any other cord in your house. Those are NOT CHEAP. (okay yes, I am still a bit upset with  my cat about this one, WHY, of any cord could it have not been the NORMAL plain old black charger cord)

So there you have it, it really is that simple, will save your cords, save you some money, and save kitty from finding a new home! (Who am I kidding, mine could eat every last cord in this house and I would still love them to pieces, just do not tell them that!)

Cheesy Tuna Casserole

Take some help from a jarred sauce to make this classic home style casserole.

 

What you need:

  • 3 c. Uncooked Pasta (any short cut style)
  • 1 – 16 oz. Jar Ragu Double Cheddar (or similar) Sauce
  • 8 oz. Cheese Cubed or Shredded (cheddar, co-jack, pepper jack, etc.)
  • 2 Cans Tuna (drained)
  • ½ c. Milk
  • Black Pepper to Taste
  • 1 c. Crushed Crackers, Potato Chips, or Bread Crumbs (optional)
  • Grated Parmesan Cheese

 

Directions:

  1. Bring a pot of salted water to a boil. Stir in pasta and cook according to directions, under cooking by one minute. Drain and rinse pasta.
  2. Warm the cheese sauce and milk over low heat while the pasta cooks. (Tip: Add the milk to the emptied sauce jar and, with the lid on, give it a good shake to easily get all the sauce out.)

  3. Fold cheese chunks/shreds, tuna* and pepper into sauce mixture.

  4. Toss pasta and sauce mixture together until blended.  Pour into a greased casserole dish
  5. Top with Parmesan cheese and crumb topping if desired.

  6. Bake at 350° for 25 minutes until golden brown and bubbling.

*substitute cooked sausage, bacon or ham pieces to your taste. Also, peas are a wonderful addition to this dish.

BEST French Dip Sandwiches

BEST French Dip Sandwiches


What You’ll Need: french dip6

  • 2.5-3# roast (I used a beef roast, but surely a pork or lamb roast would work just as well)
  • 1 Hidden Valley dry ranch packet
  • 1 packet Lipton beefy onion dry soup mix
  • Handful of pepperonchinis (I used 7, no spice – just FLAVOR!)
  • 2 cups beef broth
  • Sliced Cheese (I used provolone)
  • Black Pepper
  • Olive Oil
  • 6-8 “Durable” Rolls (rolls that will hold up to the au jus and not get soggy then fall apart on you – I used Terra Rolls from Festival)

  1. Season roast with black pepper (you can also season with salt if you’d like but I opted not to because the ranch packet and beef broth have plenty of salt)
  2. Add roast to crock pot with broth, soup mix, ranch mix and pepperonchinis. Cook on LOW for 6 to 8 hours in a slow cooker
  3. Once cooked, let your roast rest before cutting so all the juices do not run out. Slice thinly and add back to au jus until ready to prepare sandwichesfrench dip4
  4. Cut your rolls in half (do not cut all the way through). Brush the inside with olive oil. put them face-down on a cookie sheet and bake at 400º for 5 minutes or until brown & toasty
  5. Make foil “boats” to hold your sandwiches up while toasting
  6. Put sliced meat into your rolls and top with sliced cheese

  7. Put back into the oven for about 5 minutes until cheese is nice and melted, put some au jus into a small dipping dish and ENJOY

What You’ll Need:

  • 2-2.5 pounds potatoes (I usually use red, but have used russet & Idaho also for this recipe)
  • 1 packet dry Hidden Valley Ranch mix
  • 1/3 cup Olive Oil (I used pure oo but have used evoo also)potatoes2

Directions:

  1. Preheat oven to 400º
  2. Cut potatoes into small wedges (or chunks works fine too)
  3. In a large bowl mix together potatoes, olive oil and ranch
    mix until potatoes pieces are well coated
  4. Pour potatoes out onto a cookie sheet (I STRONGLY suggest lining
    the cookie sheet with aluminum foil – it is easier to turn the potatoes
    and to clean afterwards)

  5. Bake 20 minutes and turn potatoes over, bake another 20 minutes

Copycat Starbucks Blueberry Muffins


What you’ll need:

  • 2 cups all purpose flour + 2 tablespoon
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup sugar + 4 tablespoons sugar & 1 teaspoon
  • 2 large eggs
  • 2 teaspoons honey
  • 1/4 cup vanilla yogurt
  • 1 teaspoons vanilla extract
  • 1/4 cup whole milk
  • 2 cups fresh blueberries (defrosted & drained frozen blueberries would also work for this recipe)

Directions:

  1. Preheat oven to 350º
  2. Line a muffin pan with liners (I was able to make 20 “filled” muffins with this recipe)
  3. Mix together 2 cups of flour, baking powder and salt – set aside
  4. Cream together butter and 1 cup of sugar. Add eggs, milk, yogurt, honey and vanilla.
  5. Mix blueberries with 1 tablespoon of flour, coat well – this helps the blueberries from sinking to the bottom of your muffins. Add blueberries to your batter

  6. Add batter to muffin pans, bake for 5 minutes

  7. While baking, mix streusel topping. Mix together vegetable oil, 1 tablespoon of flour and 4 tablespoons sugar + 1 teaspoon

  8. After baking for 5 minutes, remove muffins and add streusel topping. Bake for an additional 15-20 minutes (poke with a toothpick at 15 minutes)

 What You’ll Need:

  • Metal Wire Wreath (I used an 18″ wreath)
  • Red, White & Blue Paints & Paintbrushes
  • Clothes Pins (I used 54)
  • Wood Crafting Stars
  • Ribbon (I used red)
  • Hot Glue Gun & Glue Sticks
  • White Spray Paint (flat finish)
  • Clear Spray Paint (satin finish)

Directions:

  1. Spray paint the wire wreath white & let completely dry (with the flat finish will dry quickly)

  2. Figure out how you want your clothes pins. I alternated sides and put a pin about every half inch

  3. Decide how big of a section you want the blue part of your “flag” to be & how many pins you want in each “stripe.” My blue section had a total of 19 clothes pins, I also had 25 red clothes pins and 15 white pins (in sections of 5)
  4. Paint your clothes pins and stars (I used 13 stars)

  5. Once clothes pins and stars are dry, you can start re-placing them onto your paint wreath and hot gluing them in place

  6. After clothes pins are all on, hot glue the stars onto the pins in the blue section

  7. Touch-up any spots you think may need a little extra hot glue to stay secure and glue on ribbon to hang, then finish by spraying with clear finish
