Easter Cake

Easter Cake

Ingredients

  • King Sized Kit Kat Bars
  • White Cake Mix
  • Frosting
  • Food Coloring
  • Marshmallow Peeps
  • Cadbury Chocolate Eggs
  • Chocolate Animal Candies
  • Green Crystal Sugar Sprinkles

Directions

  1. Prepare cake mix as directed and separate evenly into two bowls.  Add a few drops of food coloring of your choice to each bowl to make pastel colored cake.  Bake in round pans as directed and let cool.
  2. Frost between the 2 cake layers and then apply a generous amount of frosting around the edges of the cake.
  3. Place Kit Kat bars around the sides of the cake using the frosting to hold them in place, creating a fence around your cake.
  4. Apply green frosting to look like grass over the top of your cake.  I used Betty Crockers Cupcake Icing (it comes with all the tips you need).  After the grass is frosted on the cake, top with green crystal sugar sprinkles.
  5. Place chocolate animals and marshmallow peeps onto the top of the cake.  Arrange Cadbury chocolates to look like little easter eggs in your “fenced area”.

Easter Brownies… Think chocolate, Peeps, and M&M’s!

Ingredients:

  • 1 box of brownie mix (could use chocolate cake mix, too) -plus ingredients to make brownies: eggs, oil, water
  • Peeps (2 packages, so about 20 Peep chicks or bunnies)
  • M&M’s – about 1 cup

Directions:

  • Prepare brownies as directed on box and bake about 5-7 minutes less than baking time called for (mine called for 24-26 minutes and I put them in for 20 minutes).
  • While brownies are baking, cut Peeps into bite sized pieces.

  • When timer goes off, take brownies out and top with Peeps pieces. *please note, I added Easter marshmallows at this point, too, because I should have had more Peeps – note 2 self, 2 packages of Peeps next time.
  • Put back in oven and bake an additional 5-7 minutes until Peeps are turning soft and just before they turn too brown.

  • While hot and fresh from the oven, sprinkle 1 cup of M&M’s on brownies.
  • Wait until cool to cut and enjoy!

Side Notes: Using different color Peeps would be fun! Chicks or bunnies both work! If using chocolate cake mix, instead of getting a cake like texture, to make them a bit denser like brownies, use 2 eggs & 1/2 cup oil instead of what is called for on back of box.

Chicken & Broccoli Wrap

Ingredients:

  • 1-2 Boneless/Skinless Chicken Breasts Cooked and Shredded
  • 1 head of broccoli par steamed
  • 4 ounces of shredded cheddar cheese
  • ½-3/4 cup mayonnaise
  • ¼ cup parmesan cheese
  • 2 rolls of Pillsbury crescent rolls


Preheat Oven to 350 Degrees

Directions:

  • Combine all ingredients
  • Roll out both rolls across baking pan taking care not to separate into triangles
  • Spread combined mixture into the middle of the rolled out dough
  • Fold over remaining dough on top of mixture, you want to fully enclose mixture inside dough
  • Bake for 30-45 minutes until golden brown

Micki’s Cheesy Potatoes
(Secret Recipe)

Think you have tried the best Cheesy Potatoes out there? Think again! This is my personal recipe I have put together over the last few years to get everything JUST PERFECT! It is essential you do not alter anything in the recipe. This is a double batch for our get together’s, if you want a smaller amount, you can split everything in half. Use the Ore Ida O’Brien with the peppers and onions (My hubby and son who do not like onions or peppers even love them) and very important to use the Campbells brand for the soups. Makes for the PERFECT consistency. Please make sure to bookmark this page, and come back and visit us after you make these delicious cheesy’s and let us know your thoughts!

Ingredients:

  • 2 Bags Ore Ida O’Brien Potatoes with Onions and Peppers (28 ounce bags)
  • 2 Can Campbell’s Cream of Potato (10.75 ounce)
  • 2 Can Campbell’s Cream of Celery (10.75 ounce)
  • 1 Can Campbell’s Cheddar Cheese (10.75 ounce)
  • 3/4 Container Sour Cream (16 ounces)
  • 1 Package Kraft Shredded Cheddar Cheese (16 ounce)
  • Salt & Pepper to taste

Directions:

  • Preheat Oven to 400 Degrees.
  • Mix all 5 Cans of Soup, Sour Cream, and Shredded Cheese well. Add Potatoes and continue mixing.
  • Use (2) 9×13 rectangular glass dishes and and separate potato mixture between both pans. I recommend spraying them with Pam.
  • Cover with aluminum foil (shiny side in) Bake at 400 degrees for 45 minutes. Remove aluminum foil, Stir, and reduce heat to 350 degrees and bake uncovered for an additional 60 minutes. Let stand 10 minutes before serving.

Ingredients:

  • Bread

  • Eggs

  • Meat of Choice

  • Pam Spray

Step By Step Photo Directions:

  • Preheat oven to 350 Degrees & Spray muffin pan with Pam

  • Use a circular biscuit cutter in the size that fits your muffin pan and cut out circle in bread (You can also use a glass)

  • Place the cut bread inside each muffin cup

  • Wrap your meat around muffin cup

  • Crack 1 egg at a time in separate cup and pour into each muffin cup

  • Bake at 350 Degrees between 15-20 minutes depending on how you like your eggs done.

  • I bake the leftover pieces of bread to toast them and place each egg cup in the hole

Bread Pudding Recipe

Bread Pudding Recipe

Ingredients:

  • 1 to 1 ½ cups sugar
  • 5 large eggs
  • 2 cups milk
  • 2 tsp vanilla
  • 3 cups cubed Bread (I used cinnamon bread) leave out over night to become stale
  • ½ cup packed brown sugar
  • ¼ cup butter, softened
  • 1 cup chopped pecans (optional)
  • Suggestion: ½ Cup peeled and cubed apples

Topping Ingredients:

  • 1 cup sugar
  • ½ cup butter, melted
  • 1 large egg, beaten

Direction:

1) Preheat the oven to 350 degrees F.

2) Grease a 9 x 13 x 2 pan.

3) Put the 3 cups of cubed bread (if thicker is what you prefer add 4 cups) into a bowl

4) Combined in separate bowl the 5 eggs, 1 ½ cups sugar (this makes it really sweet, for a little less sweet use 1 cups), 2 cups milk, & 2 tsp vanilla.

5) Pour the mixed ingredients over the top of the cubed bread and leave it stand for 15 minutes.

6) Combined in another bowl ½ cup brown sugar, ¼ cup softened butter, and 1 cups pecans (if desired) to create the crumble for the top.

7) Pour the bread mixture into the grease pan and then sprinkle the crumble over the top of the bread mixture.

8) Place in oven for 40 to 45 minutes, or until set.

9) About 10 to 15 minutes before the bread mixture is done baking, mix together ½ cup melted butter, 1 large beaten egg, 2 tsp vanilla, 1 cup sugar (here again this makes it extremely sweet, so use ½ cup of sugar for a little less sweet), Turn to medium heat and stir together until the sugar melts.

10) When bread mixture is done baking pour the sauce over the top. Can serve warm or cold

Home Made Pizza Dough Recipe

Dough Ingredients:

  • 1 1/2 cups warm water
  • 3 1/2 Cups Flour
  • 1 package (2 1/4 teaspoons) active dry yeast
  • 2 Tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon sugar
  • shortening to grease the bowl

Pizza Ingredients:

  • 1 to 2 cans pizza sauce
  • 16 ounces mozzarella cheese
  • Cheddar Cheese (Just a little to sprinkle on)
  • olive oil
  • Toppings of choice

Directions:

  • In electric mixer bowl combine the warm water and the package of active dry yeast, let stand for 5 minutes.   If it is not dissolved at end of the 5 minutes stir until it is dissolved.
  • Add olive oil, flour, salt, & sugar to the mixing bowl
  • Attach mixing paddle to mixer and mix contents of the bowl for a minute or 2 on low speed.
  • Remove mixing paddle and replace it with the dough hook.  Knead with the mixer on low speed for 10 minutes (you can knead by hand if you do not have an electric mixer) if dough seems to wet you can sprinkle more flour into the bowl.  From the times i have made it, it is always dry so you may have to add a little more water.
  • Use some shortening or olive oil to grease the bottom and all the sides of the bowl
  • Roll the dough in the bowl so to coat the entire ball of dough
  • Cover bowl with plastic wrap and let stand for 60 to 90 minutes or until it doubles in size (the longer you let it rise the more you will improve the flavor).  The longest I waited was 2 hours.
  • Pre-heat the oven to 450 degrees.
  • Punch down to deflate the dough a bit then divide into two equal halves and form them into balls and place them into their own separate bowl.  Cover with plastic wrap and let stand for 10 minutes.

  • On a floured surface place one of the dough balls and flatten it with your hands.  Now starting at the center and working outwards use your fingertips to stretch the dough out to the desired diameter (10 to 12 inches).  Let the dough rest for 5 minutes (it will shrink back in size) then continue to push the dough back out to the desired diameter.  Once it stays at the desired diameter, use the palm of your hand to flatten out the thick spots.  If you desire you can pinch the end of the dough to form a lip.
  • Now do the same thing to the second dough ball.
  • Sprinkle a little flour onto the flatten dough and spread it around.  Now fold in half and sprinkle flour on the dough and fold in half again. Sprinkle your pizza pan with corn meal (flour works also) and place the dough on your pizza pan and unfold it.
  • Place your pans in your oven for 8 minutes to start the dough cooking.
  • Remove you pans from the oven and place on pot holders.
  • Brush the dough with olive oil (this will prevent the crust from becoming soggy when you add your toppings)
  • Spoon on your pizza sauce, sprinkle on your mozzarella cheese, and your desired toppings on the the dough.  Now I sprinkle on a little mild cheddar cheese to give it a little more flavor.
  • Place in your oven for 10 to 20 minutes, depending on the amount of toppings and how crispy you like your crust.

Home Made White Bread Recipe

Ingredients:

6 to 7 cups Gold Medal Flour
2 tablespoons sugar
1 tablespoon salt
2 tablespoons shortening
2 packages active dry yeast (4 1/2 teaspoons)
2 ¼ cups very warm water
2 tablespoons butter (melted)

Directions:

  • Mix 3 ½ cups of the flour, the sugar, the salt, the shortening, and the yeast into a bowl and mix thoroughly.  Add warm water and mix on low speed for a minute or two with an electric mixer, frequently scrapping the sides.  Then add 1 cup of flour at a time until dough is easy to handle.  What I have found is that you will add 3 more cups of flour to attain this.
  • Sprinkle flour onto the surface that you are going to knead the dough on and also on your hands.  You will knead the dough for about 10 minutes (it will give you one heck of a workout for your arms).
  • Grease a large bowl with shortening and place the dough in it. You will turn the dough to grease all of the sides.

  • Loosely cover the bowl with plastic wrap and let the dough stand for 60 minutes or till it doubles in size.

  • Grease the bottoms and sides of two 9 X 5 loaf pans with shortening.
  • After dough has doubled in size push your fists into the dough to deflate.  Divide the dough into two equal parts.   Flatten each of the parts with your fingers or a rolling pin into 9 x 18 inch rectangles.  Now start rolling the dough tightly, starting with the 9 inch side.  After each turn seal the edge with your thumbs or fingers.  Once rolling is done pinch the the seam into the dough. Then each of the ends closed. Place the dough in the pans seam side down. Now brush the melted butter on the tops and sides of each loaf.bread5
  • Loosely cover with plastic wrap and let rise for another 50 minutes.

  •  Move your oven racks down so to allow the tops of the pans to be in the center of your oven.  Pre-heat your oven to 425 degrees Fahrenheit.
  • Once the dough has risen, place in the oven and bake for 25 to 30 minutes.  I have found if you use ceramic loaf pans it will be around 28 minutes and if you use a metal loaf pan it is closer to the 25 minute time, you will want to start checking it thou around 22 minutes.
  • Brush the tops of the loaves once again with melted butter.  Let cool for about 5 minutes.  Use a plastic spatula around all four side, gently lifting upward.  With oven mitts turn the pans upside down to remove the loaves from the pans.

Cheeseburger Potato Casserole

Ingredients:

1 lb. hamburger
3-4 medium sized potatoes
8 oz. cheese
2 to 2 1/2 cups warm milk
3 tablespoons butter
3 tablespoons flour
salt & pepper to taste

Directions:

  • Preheat Oven to 350 Degrees
  • Peel & slice potatoes and layer in 13×9 pan

  • Brown hamburger and remove from pan. Leave the good stuff and drippings in the bottom!
  • In pan with drippings, melt butter & add flour (creating a roux)

  • Slowly add warm milk and stir with whisk until all combined

  • Slowly combine your cheese with the white sauce, once combined add hamburger.

  • Pour over sliced potatoes and Bake for 60 minutes.

To help save money and make healthier snacks for my family, my husband bought me a food dehydrator for my birthday. (Very romantic, right?)

I am going to make Fruit Leather from applesauce. My dehydrator came with a nice tray for this, if you don’t have one, use wax paper.

Applesauce, check! I am going to use the cherry one!

Spread your applesauce of choice on the tray.

Make sure to spread evenly to the edges!

Turn on dehydrator to 135 degrees (this was recommended by my instruction book, yours may be different). We are going to let it run until the applesauce is no longer sticky or mushy, which can take 8-12 hours or more depending on how thick you make your layer of applesauce.

Once your fruit leather is completely dry, you can peel it off the wax paper or tray, cut into individual portion sizes with a kitchen scissors or knife, and store in a sealed container (ziploc bags work great)!  My kids love to have this as an after dinner snack or in their lunch box for school!  It never lasts very long in our house!
